Pork Banh Mi Burgers With Grilled Pineapple Will Be Your Go-To Summer Recipe

Grilled Pork Banh Mi Burgers With Grilled Pineapple

Ingredients:

Pickles
1 carrot, peeled and cut into matchsticks
¼ daikon, peeled and cut into matchsticks
1 tsp kosher salt
¼ cup warm water
3 Tbsp granulated sugar
½ cup distilled white vinegar or rice vinegar
1 jalapeño, thinly sliced and divided

Burger
3 slices bacon, roughly chopped
1 cup of cilantro leaves and tender stems
1/3 cup chopped shallots or onion
2 Tbsp granulated sugar
1 ½ Tbsp fish sauce
1 ½ Tbsp minced garlic
2 tsp soy sauce
½ tsp ground black pepper
1 stalk lemongrass, trimmed, pounded and minced
1 pound medium or lean ground pork

Other
4 thick pineapple ring slices
4 hamburger buns, halved horizontally
2 mini cucumbers, thinly sliced
Cilantro
Mayonnaise (optional)

Directions:

1. In large bowl, toss together the carrots, daikon and salt. Let stand for 30 minutes. Drain in colander and squeeze excess liquid.

Tip: To cut carrots and daikon into long, even matchsticks, a Japanese mandoline (benriner) is an affordable secret tool favoured by home cooks and professional chefs.

2. In a small bowl, whisk together the warm water and sugar until dissolved, then stir in the vinegar. Add reserved carrot mixture and half of the jalapeño; let pickle for 30 to 60 minutes and refrigerate.

Tip: You can store your pickled carrots and daikon in a covered jar in the refrigerator for up to 3 days.

3. Meanwhile, you can make the burger patties. In a food processor, combine the bacon, cilantro leaves and tender stems, shallots, sugar, fish sauce, garlic, soy sauce, pepper and lemongrass. Pulse to combine. In a large bowl, add the pork and bacon mixture until combined.

Tip: To use lemongrass, trim the base and top. Remove the outer woody and dry layers and crush 4 inches from the bottom using the base of a chef’s knife to release the oils. Cut into 1-inch pieces and use in marinades and pastes.

4. Divide patty mixture into 4 equal portions and form each into 4 ½-inch rounds; place on squares of parchment paper and refrigerate until firm, about 1 hour or up to 24 hours.

5. Preheat grill to medium-high; brush and oil grill. Press centre of each patty with thumb to make a shallow indent to help keep their shape during cooking. BBQ the patties with lid closed until browned and cooked through, 3 to 5 minutes per side. Grill pineapple until slightly charred and caramelized, 1 to 2 minute per side.

6. To assemble, top bun with patty, pineapple, pickled vegetables, cucumbers and cilantro. Serve with mayo if desired.

Carrot Cake With Cream Cheese Icing

Prep Time: 15 minutes
Bake Time: 30 minutes
Total Time: 45 minutes
Makes: 9 servings

Ingredients:

Cake
2 tsp white vinegar
100 ml whole milk
1 ½ cup all-purpose flour
1 tsp baking soda
½ tsp kosher salt
1 tsp ground cinnamon
½ tsp ground ginger
½ cup granulated sugar
½ cup brown sugar
1/3 cup grapeseed oil (or any neutral oil)
5 Tbsp butter, melted
2 large eggs
1 tsp vanilla extract
1 ½ cup carrots, grated
1/3 cup toasted pecans, chopped
1/3 cup fresh pineapple, chopped
1/3 cup shredded coconut

Glaze
1/3 cup brown sugar
3 Tbsp whole milk
3 Tbsp butter
Splash vanilla

Icing
¼ cup unsalted butter, room temperature
4 oz cream cheese, softened
1 ½ cup icing sugar
½ tsp vanilla
Pinch salt
1 Tbsp heavy cream

Directions:

Cake
1. Preheat oven to 350°F. Line a 9×9-inch square pan with parchment paper and grease with oil. Set aside.

2. In a small bowl, stir together the white vinegar and milk, set aside to curdle.

3. Sift the flour, baking soda, salt, cinnamon and ginger.

4. In a large bowl, whisk together the sugar, brown sugar, oil and butter. Whisk in the eggs, one at a time and mix well after each addition. Add the milk mixture and vanilla. Mix the dry ingredients to the wet until just combined. Fold in the carrots, pecans, pineapple and coconut.

5. Transfer the batter to the prepared pan, pushing it into the corners and smooth out the top. Bake in the oven for 28-32 minutes until golden brown and when a toothpick inserted into the centre comes out clean.

Glaze
1. In a small saucepan, combine the brown sugar, milk, butter and vanilla over medium-high heat. Once the mixture starts to bubble, turn the heat to medium-low and simmer for about 3-4 minutes until the mixture thickens. Remove from heat.

Icing
1. In the bowl of a stand mixer with the paddle attachment, cream both butter and cream cheese until smooth. Add the icing sugar, vanilla, salt and cream and beat for 1 minute on medium speed.

Assembly
1. Cool the cake in the pan for 10-15 minutes. Transfer to a wire rack and brush on the glaze while the cake is still warm. Let the cake cool completely before icing the cake. Garnish with sliced carrot hearts and mint leaves, chopped pecans or shredded coconut. Enjoy!

These Coconut Shrimp Tacos are Cheaper Than Taking a Vacation

Looking for a simple, bright and sunny dish to cast away your winter blues? Look no further! These flavour-packed tacos are the key. Fresh and flavourful charred pineapple salsa, zesty pickled cabbage, tender, crispy coconut shrimp and zesty lime crema come together to make for a new 30-minute dinner favourite.

Tropical Pineapple Coconut Shrimp Tacos

Prep/Cook Time: 30 minutes
Total Time: 30 minutes
Servings: 12 tacos

Ingredients:
1 cup water
1 cup rice vinegar
1 Tbsp sugar
1 tsp salt, divided
2 cups finely sliced red cabbage
4 slices pineapple, about ½ inch thick
1 jalapeno
2 rings red onion, about ½ inch thick
½ cup cilantro leaves and tender stems, chopped
2 limes, divided
1 cup sour cream
1 tsp agave syrup or honey
450g medium shrimp, thawed, peeled and deveined
½ cup flour
¼ tsp pepper
2 eggs, beaten
1 cup shredded, unsweetened coconut
¾ cup panko breadcrumbs
12 small flour tortillas

Directions:

1. Bring water, vinegar, sugar and ½ tsp salt to a boil in a medium saucepan. Add cabbage and boil for 2 minutes. Remove from heat, cover and set aside for 10 minutes. Drain and set aside to cool.

2. Heat a cast-iron skillet over medium-high heat. Cook pineapple, jalapeno and onion in batches until charred and tender, about 4 to 6 minutes, flipping halfway. Set aside to cool slightly. Once cooled, remove pineapple rind and chop the fruit and vegetables (use the seeds of the jalapeno if you want heat, discard if you want a milder salsa). Toss with the juice of one lime and cilantro.

3. Stir together the sour cream, juice of remaining lime, agave syrup or honey and 1 tsp zest in a small bowl.

4. Place flour and eggs into separate medium sized bowls. Stir remaining ½ tsp salt and pepper into eggs. Stir together coconut and panko in another medium bowl.

5. Dredge shrimp in flour, then egg mixture followed by coconut mixture. Heat enough oil to generously coat the bottom of a non-stick skillet over medium heat. Fry shrimp in batches until golden brown, about 3 to 4 minutes, turning halfway and replenishing oil, if needed between batches. Set aside on a cooling rack-lined baking sheet.

6. To warm tortillas, heat a cast-iron skillet over medium-high. Add tortillas in batches, cooking until browned on both sides, about 1 to 2 minutes, turning halfway. Wrap in a clean kitchen towel to keep warm while cooking remaining tortillas.

7. Spread tortillas with lime crema, topped with pickled cabbage, shrimp and pineapple salsa.

Noah Cappe’s Carnival Eats Travel Bucket List

Hawaiian Pizza

The History of Hawaiian Pizza

Despite its tropical name, Hawaiian pizza is actually a Canadian creation. The pineapple-laden pie is the brainchild of retired cook, Sam Panopoulos, who first served pineapple on pizza at Satellite Restaurant in Chatham, Ont.

By the mid 60s, Satellite Restaurant (now under different ownership) had been serving pizza for a few years, although Panopoulos, now 82,  says the dish was still a novelty for Canadians, who at the time topped their pies conservatively.

“People only put on mushroom, bacon and pepperoni, that’s all,” says Panopoulos. “I had pineapple in the restaurant and I put some on, and I shared with some customers and they liked it. And we started serving it that way. For a long time, we were the only ones serving it.”

As we know it today, Hawaiian pizza is a classic American-style cheese pizza topped with ham and pineapple. Variations may include bacon in place of or in addition to the ham, but Panopoulos says that his major contribution was simply adding the pineapple.

“You could have only pineapple, you could have bacon and pineapple, you could have mushrooms and pineapple, anything. Just like today, you could have a choice,” he says.

Panopoulos enjoyed a certain amount of media attention over the last few years, but the pizza claim overshadows what may actually be Panopoulos’ most enduring legacy: a passion for introducing diverse flavours to Canadian diners.

In the early 60s, says Panopoulos, pizza was considered ethnic food, an Italian-American curiosity that adventurous Canadians would try when they crossed the border. Back then, Panopoulos would drive to Detroit for a taste of the cheese-topped pie.“[Then] we bought a little oven and learned how to make pizza,” he says.

Panopoulos didn’t stop with pizza. Over the years, the Satellite Restaurant introduced a variety of novel flavours to Chatham residents, like Chinese food prepared by a Chinese cook, and dishes from Panopoulos’ native Greece.

“Today you can go to a Chinese place and have a chicken salad, Thai place they give you something else. But in those days there was no way you could mix flavours,” says Panopoulos. “When you told someone to try pineapple on their pizza they looked at you like, ‘Are you crazy?’

Say what you will about Hawaiian pizza, a polarizing dish that seems to attract as many fans as detractors. But it’s this spirit, exemplified by Sam Panopoulos and other culinary innovators, that has expanded Canadian cuisine beyond maple syrup and bacon, to represent the cultural diversity that makes this country — and its cuisine — great.

Immune-Boosting Green Smoothie to Start the New Year

Being pregnant with my daughter first got me into drinking green smoothies.

Did you know that getting over a cold is much harder when you are pregnant? I had no clue until I was pregnant and fighting the longest cold of my life. Why does it take so long? Well, first of all, the pregnant body gives the growing baby highest priority. Healing mom is not as important. Secondly, there is hardly any cold medication approved for use during pregnancy. So I was left dealing with this extended cold without any meds.

I realized that I had to take a proactive approach to boosting my immune system. That’s when I started to make green smoothies part of my routine. I still didn’t like the thought of a green-tasting drink, so my very first green smoothie creation ended up tasting like a cocktail instead. The tropical flavours of pineapple and coconut do an amazing job at masking the taste of leafy greens.

Is it any surprise, that my daughter already loves green smoothies? She insists on sharing my smoothies with me and loves it when I make them into mini popsicles for her.

Yield: 2 servings (2 1/2 cups/625 mL)

Ingredients
1 cup (250 mL) coconut milk
2 tbsp (30 mL) organic shredded coconut (optional)
1 cup (250 mL) packed fresh spinach
1 cup (250 mL) frozen pineapple chunks
½ frozen banana
shredded coconut (for garnish, optional)
fresh pineapple (for garnish, optional)

Directions
1. In blender or food processor, combine coconut milk, shredded coconut, spinach, frozen pineapple and banana. (Layering ingredients from liquid to frozen makes for easier blending.)
2. Garnish rim of serving glasses with shredded coconut and piece of pineapple, if desired.
3. Serve immediately, or freeze leftovers to make green popsicles.
