I have been eating those breakfast cookies for as long as they have been open! Also their Easter cream egg is the most addictive thing I have ever put in my mouth. No Food Snobs Here: Noah Cappe on Why Wall of Chefs is for Everyone

You may know Food Network Canada personality Noah Cappe from Carnival Eats or The Bachelor Canada franchise, but I first knew him from one of my first-year theatre classes in Toronto once upon a time. While promoting his latest hosting gig, Wall of Chefs, I had a chance to catch up with him to get an inside look at the new competition series and find out how he became a popular voice on 21the Canadian food scene. We also chatted about his favourite food trends, the gourmet ingredients he could do without, and the celebrity chef he’d love to take on a carnival food adventure.

While many hosts also happen to be chefs or restaurateurs, it was Cappe’s passion for food and not a lengthy culinary resume that brought him into the food world.

“I grew up in a big family, and food was always a big part of my life. We always ate together, eight kids plus my parents, so everything was always plentiful. When I got the audition for Carnival Eats, they were looking for somebody who had a passion for food… [but] we weren’t in Michelin restaurants. There wasn’t a need at the time to be able to break it down. So it was a nice entryway into the network. I’m a firm believer that energy is contagious and that people respond to genuine, real moments, and that’s what I do.”

Wall of Chefs has been such a beautiful fit [in that sense]. I feel like I’m a conduit between home cooks and the celebrity chef world.” The home cooks on Wall of Chefs are faced with three challenges, starting with the Crowd-Pleaser. Although Cappe stands by his crowd-pleasing dish, he doesn’t think he’d make it past the first round.

“My go-to [dish] is unfortunately not elevated enough to get me through to the next round, which is a shame. I make a toasted English muffin with peanut butter better than anybody else. It sounds silly but I have a little trick with a double toasting process. Would I still make it just to say, ‘Listen, you need to experience this and I’m willing to take the loss for the greater good?’ Yes!”

The second round in Wall of Chefs has the home cooks creating a dish using three staple ingredients found in one of the celebrity chefs’ fridges. In case you’re curious about what three items would be in Cappe’s fridge, he was happy to divulge.

“One of them is leftovers, either from a food delivery service or from dinner out. When you host a show where you’re working with over 30 of the country’s biggest and brightest culinary names, you start dining out way more. I don’t keep peanut butter in the fridge, but I would put it in for this challenge because it’s such a big part of my diet. And then edamame. That’s the beautiful part, taking the combination of three elements that you would never really think of, besides the fact that you get a glimpse into the home fridge of a celebrity chef.”

Not all foods are created equal, and not all are loved by everyone. In one episode, the chefs on “The Wall” get into a debate about sundried tomatoes, and Cappe wasn’t scared to share which side he falls on.

“I don’t think there’s an argument. Sundried tomatoes are just bad, and half the people out there haven’t realized it yet.” He added, “And oysters. There’s a reason why people bake cheese on top of them and dump hot sauce on them because we’ve gotta hide this experience with strong, bold flavors. The first time I had ever eaten them was for the Great Canadian Cookbook. They aired the segment because my reactions were so weird. Oysters are the fancy food that I could live without.”

On the flip side, there’s one food trend that he believes has staying power.

“I’m not ready for the Brussels sprout train to stop. We made them taste delicious, let’s just eat them forever now. We’ve sent someone to the moon, invented the Internet, and made Brussels sprouts delicious. We’ve done the impossible.”

Outside of Food Network Canada, Cappe is known as the host of The Bachelor Canada and The Bachelorette Canada but says the Wall of Chefs are harder to wrangle than love-hungry men and women.

“It’s like being a college professor in a room of brilliant minds, and you’re trying constantly reel them in. They are so excited to be there. The format, the energy, the space creates such a buzz. It’s not very often that these chefs get to be in a room together, let alone 12 of them who are bringing such unique, diverse and different backgrounds. Whether it’s Chef Suzanne Barr and that Jamaican angle, or Chef Meeru Dhalwala and her traditional Indian flavors, when you get these people who are the pinnacle of entire genres of foods in one space together, they’re going to talk a lot.”


There’s never a dull moment with “The Wall” and Noah Cappe

There’s one type of food where Cappe is considered an expert: the
wild world of midway fare that he’s sampled on Carnival Eats. And there’s one particular Wall chef that he’d like to introduce to that world.

“Chef Susur Lee made a comment in an episode that he’s never had mac and cheese. I would love to take him out to the fairgrounds and give him a hot, fresh order of deep-fried mac and cheese balls with a little honey and Sriracha drizzle. He’d be a fun personality to take out into the world of carnival food because it is the polar opposite of his style, ingredients, and flavours. I’m trying to picture him eating a bacon-wrapped, deep-fried hamburger dipped in jam.”

Cappe is equally passionate about basketball as he is about food, and has some ideas on creating the ultimate Raptors fan dish.

“You have to play into the stadium food angle, like pizza slices, hot dogs, and peanuts. Let’s do a peanut encrusted, bacon-wrapped hot dog dressed like a pizza slice. Hit it with a little tomato sauce and maybe some pepperoni. Then we’re going to brush the inside of that hot dog bun with garlic butter. And we’re going to call it the Sir Dunk-A-Lot Dog.”

By the end of our chat, one thing was evident: Cappe’s genuine enthusiasm for his latest project.

“I’m so excited for everybody to see [Wall of Chefs]. I’m a viewer of Food Network Canada as much as — if not more than — I am a personality on the network. And this is a show that I know I would watch. There’s really nothing like it, but at the same time, it feels like it’s the best parts of all the shows that you know.”

What Food Network Stars Are Thankful For

Whether you write it down, share  it at the dinner table or quietly reflect, Thanksgiving is the perfect time to pause, and take a moment to celebrate all your good fortunes. From good health to cherished moments with close friends and family, to a table full of delicious food, we all have a lot to be grateful for. We caught up with some of our stars to hear about what gives them pause, and what they’re most thankful for this holiday season.

“I am thankful for those quiet little moments that tuck themselves in between the noisy, messy workings of life,” says Anna Olson, host of Bake with Anna Olson. “This time of year, the sound of Canada geese flying overhead in formation, or the tapping of cool, autumn rain against my kitchen window is enough to make me stop and pause.”

As an immigrant from Hong Kong, Susur Lee has always been thankful to live in a welcoming country such as Canada. “This year that thankfulness is amplified,” the chef and judge on Chopped Canada says. “Canada’s attitude towards immigrants and refugees makes me even more thankful that I landed in this great country.”

Susur’s cast mate John Higgins shares the same sentiment, adding Canada is “the place where dreams come true.”

When it comes to Thanksgiving, fellow judge Roger Mooking appreciates all the good food on the table. “I’m most thankful for a properly well-made Trini roti with bone-in goat.  Oh yeah, and my family, too!”

Having spent most of the year on the road for Carnival Eats or Bachelorette Canada, host Noah Cappe is looking forward to coming home. “I’m thankful for the time I get to spend with family over the holidays, catching up and just hanging out around the table,” he says. “I’m also really thankful for gravy!”

“In recent years my dad has fallen in love with cooking,  more specifically, working the Q!” says Carnival Eats host Noah Cappe. “Last year, we were standing by the barbecue in the classic father and son pose, and I did a fake intro like he was cooking on Carnival Eats and he just went with it. It was hilarious!  That’s my dad.  That’s why I love those moments you get on a day like Father’s Day.”

When Anna Olson was younger, she admits she had a hard time expressing her gratitude for her dad on Father’s Day. “All the typical greeting cards showed guys fishing, golfing or hanging out in the garage — and my dad did none of these things,” says the Bake with Anna Olson star. “But as I grew up and took on baking as my after-school hobby, I quickly learned that he appreciated sweets as much as I liked making them, and he still does to this day.  When I am working on new dessert recipes, I always make sure my dad gets first pick of the sweet selection. His favourite dessert is my key lime pie.”

Chopped Canada judge Eden Grinshpan says she was lucky to sit down and have dinner with her whole family every night as kid. “My father grew up in Israel and always talks about the foods his mother gave him. Every special occasion we try to replicate those dishes for him, like smokey eggplant with sliced tomatoes and a sponge cake with 12 eggs in it,” she says. Her father, Menashe Grinshpan, has been supporting the star since day one. “Because of the support and love from him and my mother [Riva], I have been able to achieve everything I have ever wanted to do in my life. I’m a very lucky girl.”

Cooks vs. Cons judge and Sugar Showdown host Josh Elkin was four years old when he gave his dad his first gift. “I built my dad a pencil holder for his desk. To this day, he still has it, although it doesn’t hold pencils anymore,” he says. While pies and ties are popular gift items these days, the star is grilling up something different. “I would love to cook my dad an awesome steak dinner, which I’m sure he would adore. However, it wouldn’t last through the test of time like a pencil holder has.”

“My father was a second generation restaurateur so he clearly inspired me in my career,” says Chopped Canada judge Roger Mooking.  His father Allay and mother Gemma raised him in Trinidad before moving to Canada at the age of five. “I grew up in a household of good steady cooking and music.” Sounds like the perfect pairing to us!

“My mom raised EIGHT kids,” says Carnival Eats host Noah Cappe. “She dedicated a huge part of her life to making all of ours better, so Mother’s Day is super special for lots of reasons.” Now that Noah and his siblings are grown up, the dinner table is crowded — these days, it sits close to twenty people including all the spouses and grandchildren, says Noah. “But the moments during those nights, when there are five different conversations at once, and dishes are being passed around in fluid rotation from years of practice, and we couldn’t hear the doorbell if it rang, from the noise in the room — that’s when she’s the happiest, and those are my favourite memories of Mother’s Day.”

Cooks vs. Cons judge and Sugar Showdown host Josh Elkin never forgets to give his mom flowers and a sweet card for Mother’s Day, although he always forgets what he wrote on the card. “I give my mom the card, thinking that I wrote the most unique message, and she responds saying, ‘I love it Josh, you’re so sweet,’” he explains. “Little do I realize, year after year, I write the same thing on the card.” This year Josh plans to step it up with — what else? — a sugary treat. “I’ll be baking my mom some sweets, maybe even write some niceties on a cake using some icing. That way, it’ll for sure be unique.”

Susur Lee credits his parents for working hard to provide for his family. “I wouldn’t be where I am or who I am without my mother and father,” says the Chopped Canada judge. “I know it sounds predictable, but because she was always working, she didn’t spend a lot of time in the kitchen. I was either eating her terrible food or going out for dim sum with my dad.” But all that time suffering through bad meals or eating delicious restaurant dinners inadvertently shaped the budding chef. “Together, without really knowing it, they shaped the way I would eat and interact with food for the rest of my life.”

“My mom and I have a special bond around Mother’s Day,” says Bake with Anna Olson star Anna Olson. It’s not just that she loves her mom, but Anna’s birthday is around the same time as Mother’s Day, too. “We’ve always made a super girly thing of it,” she says. Anna and her mom exchange gifts like scarves and perfumes, and doll up each other’s desserts. “When I think of Mother’s Day, I think of birthday cake. As a kid, my Mom used to always top my cake or cupcakes with these plastic ballerinas that I thought were the most glamorous thing ever. Thanks, Mom!”

Chopped Canada judge Michael Smith is a proud Prince Edward Islander, so it should come as no surprise that his Mother’s Day memories feature the island province’s famous lobsters. “On Prince Edward Island, Mother’s Day is traditionally celebrated with a giant feed of lobsters,” he says. “Our fishing season starts at the beginning of May, so lots of moms get their first taste of our famous lobsters on their special day. Even though they should have the day off, I suspect many moms willingly stay in the kitchen just to keep an eye on things!”

Noah Cappe’s Carnival Eats Travel Bucket List

As the host of Carnival Eats, Noah Cappe knows carnivals like the rest of us know our own backyards. But this world-travelling, funnel cake-funnelling host still has a few carnivals, fairs and festivals on his bucket list.Carnival-Eats,-Noah-Edmonton_0079

“For the show, we’ve focused mostly on North America,” he says. “We’ve covered so much ground and we’ve gone to most places, [but] there’s still a few we haven’t done. We haven’t gone to Las Vegas – a carnival in Vegas would be wild.”

But Sin City’s (surely) flashy deep-fryers aren’t the only ones Noah wants  to sample from. The Toronto native would love it if the show ventured a little further, putting Alaska, the Yukon and Hawaii on his Carnival Eats bucket list.pineapple-drink

“I’d love to see Carnival Eats in Hawaii,” he says, and not just because he’d get a free vacation there. “People want to see how to use pineapple in different ways,” he says.

Noah Cappe’s Ultimate Carnival Creation

As the host of Carnival Eats, Noah Cappe samples all sorts of wacky, decadent and over-the-top carnival food. But there’s one item he’s still looking forward to: a sweet and savoury creation he calls the ‘Clubbel’.

“I’m still waiting for someone to do the funnel cake club sandwich,” says Noah. “You’ve got funnel cake, your turkey, bacon, cheese and another funnel cake. Then, turkey cheese, lettuce, tomato, mayo, mustard, whatever you want, and put another funnel cake on top. Cut that in half and you have a funnel cake club sandwich. A Clubbel!”

As Noah explains, the Clubbel™ just makes sense.

“Funnel cake is one of the pillars of carnival foods,” he says.

“The funnel cake itself is deep fried batter dough. It’s like a doughnut but sprung out in a twisted, curvy, tangle that gives you more of that crunchy golden outside part that everyone loves. It’s just around the outside because it’s intertwined within itself,” he says, stating that’s the key to the funnel cake. “That’s what makes it such an amazing replacement for bread, in the Clubbel sandwich.”

We couldn’t agree more!

In the meantime, we’ll be satiating our ‘Clubbel’ cravings by tossing homemade funnel cakes in a bowl with bacon, turkey, cheese, lettuce and tomato, dousing the whole thing with mustard and mayo and devouring it on the couch while we catch up on Carnival Eats.
