Kardea Brown’s Maple BBQ Chicken and Waffles Put a Sweet Spin on Comfort Food

Inspired by passed-down family recipes and an innate flair for flavour, Kardea Brown does comfort food right with every must-try recipe she shares on Delicious Miss Brown. Her latest spin on a soul-food classic — chicken and waffles — takes your brunch to the next level with the perfect balance of warmth, spice and sweetness.

For the chicken component of the dish, Kardea makes crispy fried chicken wings the same way her grandmother and mother showed her — well-seasoned and shaken up old-school in a brown paper bag. Once golden, the wings are dipped in Kardea’s sweet-and-tangy barbecue sauce. Plain waffles wouldn’t do the finger-licking wings justice, so Kardea created a crave-worthy spin with smashed sweet potatoes and spiced up with cinnamon for a callback to sweet potato pie. Finally, maple syrup is the delicious thread that ties the dish together — it’s the sweetheart of the barbecue sauce and it’s drizzled over the waffles.

Maple BBQ Chicken and Sweet Potato Waffles

Total Time: 1 hour, 45 minutes
Active Time: 1 hour, 15 minutes

Yields: 4 servings (4 sweet potato waffles, 3 cups of Maple BBQ sauce and 5 tsp of seasoning)

Ingredients:

8 whole chicken wings, about 2 lbs. total
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
1 Tbsp Miss Brown’s House Seasoning, recipe follows
Canola oil, for frying
About 1 cup Miss Brown’s Maple BBQ Sauce, recipe follows
4 Sweet Potato Waffles, recipe follows
Pickled jalapeno slices, optional
Maple syrup, for serving

Sweet Potato Waffles
2 cups all-purpose flour
1 Tbsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
2 cups buttermilk, at room temperature
3/4 cup mashed sweet potato
1/3 cup unsalted butter, melted
1 Tbsp dark brown sugar
2 large eggs, at room temperature

Miss Brown’s Maple BBQ Sauce
One 14.5-oz can tomato sauce
1/2 cup maple syrup
1/3 cup packed dark brown sugar
1/3 cup ketchup
2 Tbsp soy sauce
1 Tbsp apple cider vinegar
1 Tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
Kosher salt and freshly ground black pepper

Miss Brown’s House Seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp sweet paprika
1 tsp kosher salt
1 tsp freshly ground black pepper

Directions:

1. Pour enough oil into a large Dutch oven to come about one-third of the way up the sides (it should be deep enough to cover the wings) and heat to 350ºF. Preheat the oven to 200ºF. Line 2 rimmed baking sheets with a wire rack.

2. Rinse the chicken wings (the water is going to help the flour stick) and place on one of the prepared baking sheets. Season both sides with 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Place the flour and House Seasoning in a large paper bag and shake to combine. Add the chicken wings, 2 at a time, shaking well to coat. Return the coated wings to the same baking sheet.

3. Fry the wings in batches until golden brown and the internal temperature reaches 165ºF, 4 to 6 minutes per side. Transfer to the other prepared baking sheet.

4. To serve, toss the wings with the Maple BBQ Sauce. Place two wings on each Sweet Potato Waffle. Top with jalapeno slices, if desired, drizzle with maple syrup and serve warm.

Sweet Potato Waffles:

1. Preheat a Belgian waffle iron.

2. Whisk together the flour, baking powder, cinnamon and salt in a medium bowl.

3. In a large bowl, whisk together the buttermilk, sweet potato, melted butter, sugar and eggs. Add the dry ingredients to the wet ingredients and stir until well combined.

4.. Add a heaping cup of waffle batter to the preheated waffle iron and cook until the outsides of the waffle are lightly browned and cooked through, about 4 minutes, depending on your waffle iron. Remove the waffle and repeat with the remaining batter.

Miss Brown’s Maple BBQ Sauce:

1. Stir together the tomato sauce, maple syrup, brown sugar, ketchup, soy sauce, vinegar, Worcestershire sauce, garlic powder and onion powder in a medium saucepan. Bring to a boil over high heat, reduce the heat to low and simmer, stirring occasionally, for 20 to 30 minutes. If the sauce becomes too thick, add up to 1/4 cup water. Season with salt and pepper. Use on poultry, pork, beef or seafood. The sauce will keep, tightly covered in the refrigerator, for up to 2 weeks.

Miss Brown’s House Seasoning:

1. Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

Cook’s Note: Miss Brown’s House Seasoning can be made in a large batch and stored in an airtight container at room temperature for about 3 months.

Kardea Brown’s Rainbow Rice Pilaf

Total Time: 45 minutes
Yields: 6 servings

Ingredients

2 Tbsp olive oil
1/2 yellow onion, diced
1/2 cup diced celery (from 1 rib)
1 orange bell pepper, seeded and diced
1 1/2 cups long-grain rice
1/2 cup orzo
2 cloves garlic, minced
1/2 tsp dried oregano
1/2 tsp minced fresh thyme
Kosher salt and freshly ground black pepper
4 cups vegetable broth
1/2 cup dried cranberries
1/4 cup toasted sliced almonds
1/4 cup chopped fresh parsley

Directions

1. Heat the oil in a large deep-sided skillet with a lid over medium-high heat. Add the onions, celery and pepper and cook, stirring occasionally, until they are just beginning to soften, about 3 minutes. Add the rice and orzo and cook, stirring constantly, until the orzo begins to brown, 3 to 5 minutes. Add the garlic, oregano, thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook, stirring occasionally, until the garlic is fragrant, about 2 minutes.

2. Stir in the vegetable broth, bring to a simmer and then lower heat and cook, covered, until the liquid is absorbed and the rice is tender, about 15 minutes. Remove from the heat and let sit, covered, for about 10 minutes. Fluff the rice with a fork and transfer to a serving dish. Top with the cranberries, almonds and parsley. Serve warm.

Kardea Brown’s Cheesy Country Ham Grit Balls

Total Time: 45 minutes
Yields: 10 to 12 servings

Ingredients:

Canola oil, for frying
1/2 cup diced country ham
2 1/2 cups leftover cooked grits
1 cup grated smoked Gruyere cheese
1/2 cup all-purpose flour
1/2 tsp paprika
1/8 tsp cayenne pepper
3 large eggs, lightly beaten
1 cup panko breadcrumbs
Kosher salt

Directions:

1. Fill a large Dutch oven two-thirds full with oil and heat over medium-high heat to 360°F.

2. Add 2 tablespoons oil to a large heavy-bottomed skillet over medium-high heat. Add the ham and cook just until browned, 4 to 5 minutes. Remove with a slotted spoon to a large bowl. Add the grits and cheese to the bowl and stir until combined. Using wet hands, scoop 1/4 cup of the grit mixture, roll it into a ball and place on a platter or large plate. Repeat until all the grit mixture is used.

3. Whisk together the flour, paprika and cayenne in a shallow bowl. In a separate shallow bowl, add the eggs. Add the panko to another separate shallow bowl. Dip each grit ball into the flour mixture and shake to remove any excess before dipping into the eggs and then into the panko, spinning to coat completely.

4. Add the grit balls to the Dutch oven in batches, frying until brown on all sides, about 5 minutes. Remove to a sheet pan lined with a wire rack and immediately sprinkle with salt.

Ingredients

Chicken:
1 cup all-purpose flour
1 Tbsp House Seasoning, recipe follows
4 bone-in chicken thighs
1 cup canola oil

Sauce:
1 medium onion, diced
2 Tbsp unsalted butter
4 cloves garlic, minced (about 1 tablespoon)
1 tsp dried thyme
1/2 tsp dried rosemary
1/3 cup low-sodium chicken stock or broth
1 1/2 cups heavy cream
1/2 cup Dijon mustard
1 tsp ground mustard
2 Tbsp chopped fresh parsley

House Seasoning:
1/4 cup garlic powder
1/4 cup onion powder
1/4 cup sweet paprika
1/4 cup kosher salt
1/4 cup freshly ground black pepper

Directions

1. For the chicken: Whisk together the flour and House Seasoning in a large bowl. Add the chicken and toss to coat.

2. Add the oil to a large cast-iron skillet over medium-high heat. Remove the chicken from the flour mixture, shaking to remove any excess, and add to the hot oil. Fry until the chicken is golden brown on all sides, about 5 minutes per side. Remove to a plate and set aside.

3. For the sauce: Add the diced onions to the hot oil in the skillet and cook until the onions are slightly softened and translucent, 2 to 3 minutes. Add the butter, garlic, thyme and rosemary and cook until fragrant, about 1 minute more. Whisk in the stock, scraping up any bits from the bottom of the pan. Simmer until thickened, 3 to 4 minutes. Whisk in the cream, Dijon and ground mustard and bring to a simmer again until thickened, 2 to 3 minutes. Add the chicken, turning to coat with the gravy. Cover and cook, turning the chicken occasionally, 25 to 30 minutes. Sprinkle with the parsley before serving.

4. House Seasoning: Yields 1 1/4 cups. Stir together the garlic powder, onion powder, paprika, salt and pepper in a medium bowl. Keep in an airtight container for up to 6 months.

Kardea Brown’s Big Apple Crumb Cheesecake

Total Time: 5 hours, 10 minutes (includes cooling and chilling time)
Yields: 8 to 10 servings

Ingredients:

Nonstick cooking spray, for the pan
15 graham crackers (or 2 cups crushed graham cracker crumbs)
3 Tbsp packed light brown sugar
1/4 tsp kosher salt
5 Tbsp unsalted butter, melted and cooled

Apple Crumb Topping:
1 1/2 cups all-purpose flour
1/2 cup packed light brown sugar
1 tsp ground cinnamon
1/4 tsp kosher salt
1 stick unsalted butter, melted and cooled
1 tart apple, peeled, cored and diced

Cheesecake Filling:
1 cup granulated sugar
2 Tbsp cornstarch
Pinch kosher salt
Three 8-ounce packages cream cheese, at room temperature
1 cup sour cream
3 large eggs plus 1 large egg yolk, at room temperature
2 tsp vanilla extract
Store-bought caramel sauce, for serving

Directions:

1. For the graham crust: Preheat the oven to 350°F. Lightly spray a 9-inch springform pan with nonstick cooking spray and place on a baking sheet.

2. Add the graham crackers to a food processor and pulse until fine, then add the brown sugar and salt and pulse until well combined. Drizzle in the melted butter and stir until the mixture resembles damp sand. Press the crumbs into the bottom of the prepared springform pan in an even layer. Bake the crust until firm, about 10 minutes, then let cool.

3. For the apple crumb topping: Stir together the flour, brown sugar, cinnamon and salt in a medium bowl. Drizzle in the butter and stir until the mixture resembles wet sand, using your hands to form some clumps. Fold in the diced apple.

4. For the cheesecake filling: Stir together the granulated sugar, cornstarch and salt in a small bowl. Pulse together the cream cheese and sour cream in a food processor until smooth. With the processor running, add the sugar mixture 1/2 cup at a time until the mixture is smooth. Add the eggs and yolk one at a time, pulsing until well combined, then add the vanilla, scraping down the sides of the processor and giving it another pulse to make sure everything is incorporated. Pour the cheesecake filling over the top of the graham cracker crust.

5. Sprinkle the crumb topping over the filling. Bake the cheesecake until it is mostly set but still has a bit of a jiggle in the center, 60 to 70 minutes. Turn off the oven and leave the oven door slightly open for 1 hour. Remove the cheesecake from the oven and allow to cool to room temperature, about another hour, then refrigerate for 1 hour more. Run a paring knife around the outside before unmolding and slicing. Serve drizzled with the caramel sauce.

Ingredients:

4 Tbsp unsalted butter, at room temperature
3 cups chopped mustard greens
1 clove garlic, minced
Kosher salt and freshly ground black pepper
12 large eggs, lightly beaten
1/2 cup milk
1/2 cup baking mix, preferably Bisquick
2 cups grated sharp yellow Cheddar
2 cups grated Monterey Jack cheese
2 cups frozen hash browns

Directions:

1. Preheat the oven to 350°F. Grease a 9-by-13-inch baking dish with 1 tablespoon softened butter.

2. Melt the remaining 3 tablespoons butter in a skillet over medium heat. Add the mustard greens, garlic and a pinch of salt and pepper and saute just until wilted, 2 to 3 minutes. Remove from the heat and cool slightly.

3. Whisk together the eggs, milk, baking mix, 1/2 teaspoon salt and some pepper in a bowl until well incorporated. Stir in the mustard greens, cheeses and hash browns. Pour into the greased baking dish. Bake until puffed lightly, golden brown and soft-set in the middle, 45 to 50 minutes.

4. Cool slightly before slicing and serving warm.

Kardea Brown’s Smoky West African-Inspired Gullah Red Rice

As Kardea Brown shows us time and time again on Delicious Miss Brown, truly crave-worthy comfort food features a few common characteristics: it’s inspired by tradition, it’s simple to prepare and it’s packed with distinctive flavour — just like her colourful, devourable Gullah red rice.

Kardea’s red rice takes a flavourful staple of West African cuisine — jollof rice — and gives it an intensely delicious, sure-fire spin that’s influenced by her Gullah culture and her contemporary cooking style.

At its base, any red rice dish is just as it sounds — it’s rice cooked in some form of tomato, typically with an element of smoked meat added. To help keep her rice from getting soggy, Kardea uses parboiled rice (which has been dried and steamed in its husk). The result? Rich, fluffy red rice that’s so good, there won’t be any leftovers.

Gullah Red Rice

Total Time: 1 hour
Servings: 8 to 10

Ingredients:

2 cups uncooked parboiled rice
¼ cup vegetable oil
8 oz smoked pork sausage, finely diced
1 large onion, finely diced
1 bell pepper, finely diced
Two 6-oz cans tomato paste
4 tsp granulated sugar
1 Tbsp garlic powder
1 Tbsp kosher salt
1 Tbsp fresh cracked black pepper

Directions:

1. Rinse the rice until the water becomes slightly clear. (This removes the starch).

2. Preheat the oven to 350ºF. In a large frying pan, heat the oil over medium-high heat. Add the sausage, onion and pepper and cook, stirring, until the vegetables soften and start to brown at the edges, 3 to 4 minutes. Stir in the tomato paste, sugar, garlic powder, salt and pepper. Stir rice into the tomato mixture and cook, uncovered and stirring occasionally, about 5 minutes.

3. Transfer to a 9-by-13-inch baking dish and spread into an even layer. Add just enough water to cover the rice (about 2 cups). Tightly cover with a lid or foil and bake for 30 minutes without uncovering the baking dish. Turn off the oven, remove the rice, fluff the rice, then cover and return to the oven for 10 minutes more.

Cooked in a low-and-slow-style (but ready in 30 minutes), Kardea’s pan-fried collard greens are tender, garlicky and just a tiny bit sweet thanks to a hint of honey.

Pan-Fried Collard Greens

Total Time: 30 minutes
Yield: 4 servings

Ingredients:
6 thick bacon slices, chopped into large pieces
1 large onion, diced
3 cloves garlic, minced
2 lbs. collard greens (about to 2 large bunches), stems discarded, leaves washed and chopped
1 Tbsp honey
A few dashes of hot sauce
Kosher salt and freshly cracked black pepper

Directions:

1. Add bacon to a large skillet over medium heat. Cook bacon, stirring occasionally, until crispy, about 5 minutes. Use a slotted spoon to remove the bacon from the pan and set aside, leaving the fat in the pan.

2. Add the onion to the bacon grease and cook, stirring, until softened, about 3 minutes. Stir in garlic and cook, stirring, for another 30 seconds or so, until fragrant. Add the greens, honey, hot sauce and a few pinches of salt and pepper. Cook the greens, stirring occasionally, until greens are nice and tender, 25 to 30 minutes. Taste and add more salt and/or pepper if necessary. Serve hot with bacon on top.

Kardea Brown’s Beef and Okra Stew Recipe

Total Time: 55 minutes

4 to 6

Ingredients:
2/3 cup canola oil
1 lb beef top sirloin, cut into 1-inch cubes
Kosher salt and freshly cracked black pepper
1 beef bouillon cube
1 large white onion, chopped
6 cloves garlic, minced
Two 8-oz cans tomato sauce
1 cup beef stock, plus more as needed
2 Tbsp tomato paste
1 1/2 Tbsp ground ginger
1 to 2 Tbsp sugar
1 10-oz package frozen okra

Directions:

1. Heat the oil in a large pot over high heat. Sprinkle the beef with salt and pepper (about 1/2 teaspoon of each). Add the beef to the hot oil along with the beef bouillon, onion and garlic and cook until the beef is seared, about 5 minutes; reduce the heat to medium. Continue to cook, stirring, until the beef is browned, about 3 more minutes. Remove the beef to a plate and set aside.

2. Stir the tomato sauce, beef stock, tomato paste, ginger, sugar, 1 teaspoon freshly cracked pepper and 1 cup water into the pot. Bring to a boil; season with additional salt. Return the beef to the pot and add the okra. Reduce the heat to low and simmer until the okra is tender, 25 to 30 minutes. Add additional stock or water if the stew is too thick; the okra will thicken the stew as it cooks.

Growing up, the Brown family didn’t eat a lot of fast food, so this homemade play on a drive-thru favourite was a real treat for Kardea. This crave-worthy recipe comes in handy for when those fast food cravings hit and you don’t want to leave the house – plus, we guarantee this sandwich will have you ditching the drive-thru.

Skin-on or off, dredge a thick piece of white fish in a seasoned panko batter and fry to golden perfection. A creamy homemade tartar sauce made with mayo, capers, dill relish and some fresh dill perfectly complements that salty and crunchy fish, slice of American cheese and a soft potato bun.

Miss Brown’s Fish Fillet Sandwich

Ingredients:

Tartar Sauce
1/2 cup mayonnaise
3 1/2 Tbsp dill pickle relish
1 1/2 tsp capers
1 tsp dried dill
1 tsp freshly squeezed lemon juice
Pinch kosher salt
Pinch freshly ground black pepper
Pinch sugar
1/4 onion, diced

Fish Sandwich
1 Tbsp lemon juice, plus additional as desired
Three 6-oz skinless boneless halibut fillets or steaks
1/3 cup milk
2 large eggs
1 tsp kosher salt, plus additional as desired
1 tsp freshly ground black pepper
1/2 cup all-purpose flour
1 1/2 cups panko breadcrumbs
1/2 Tbsp seafood seasoning, such as Old Bay
Vegetable or canola oil, for frying
3 potato buns
Unsalted butter, for toasting the buns
3 slices American cheese

A deep-frying thermometer

Directions: 

1. For the tartar sauce: Mix together the mayonnaise, relish, capers, dill, lemon juice, salt, pepper, sugar and onion in a bowl and refrigerate.

2. For the fish: Sprinkle the lemon juice over the fish fillets. Combine the milk, eggs, salt and pepper in a shallow bowl. Put the flour on a large plate. Combine the panko and seafood seasoning on another.

3. Heat 2 inches oil to 350°F in a large Dutch oven.

4. One at a time, dip the fish into the flour, then the egg and milk mixture, then the panko. Set on another plate or small baking sheet. Place the fish in the oil and fry, turning once, for 3 to 4 minutes total (if you are using the shallow-frying method, cook both sides until golden brown, 2 to 3 minutes). Transfer the fish with tongs to a plate lined with paper towels or a wire rack set in a baking sheet. (I like to hit my fish with a little salt and lemon juice while it’s hot.)

5. Meanwhile, toast the buns, by melting the butter in a pan and cooking them in it or by buttering the buns and broiling them until slightly golden.

6. Top the bun bottoms with the cheese and the fish, then spread the bun tops with tartar sauce and top your sandwiches.
