We Tried the KFC Cinnabon Dessert Biscuits — Are They Worth the Hype?

Is it possible that two popular food chains have crafted the dessert pairing we didn’t know we needed? KFC Canada has joined fast-food forces with Cinnabon for a dessert that is so 2020 — chaotic.

As of December 2, KFC Cinnabon Dessert Biscuits are available across Canada while quantities last. It’s the perfect holiday treat for those who love trying the latest food crazes — or simply want to travel back (in their minds) to warm weather and carnival eats.

So, is this dessert mashup worth the buzz? You needed answers, so we gave it a try on your behalf. (You can thank us later).

So, what exactly are KFC Cinnabon Dessert Biscuits?

This savoury treat is essentially a Frankenstein’s monster of a dessert (which is totally on-trend), combining KFC’s signature buttermilk biscuits with Cinnabon’s cinnamon brown sugar glaze, cream cheese frosting and chocolate bow tie toppers. To be honest, it reminds us of must-try summer carnival foods, like the ones that garner headlines at the CNE every year.

Customers can order them individually ($1.99), as a four-pack ($6.99) or as part of KFC’s Festive Buckets — the Festive Mighty Bucket for One ($11.99) and the Festive Double Bucket ($35.99).

First Look

“Soggy” is the first word that comes to mind. We opened a box of the four-pack and were met with gooey, melted chocolate on top — and maybe it’s just us, but we’re not really fans of desserts that look super… wet? But we’re going into this with entirely open minds. Sure, it doesn’t exactly look appetizing, but it can’t be that bad, right?

Digging In

At first bite, the dessert biscuits taste exactly how they look: soggy. The biscuit is mediocre at best — it was a lot more crumbly and dense than we would have expected and it had a weird aftertaste.

The silver lining in all this: it’s worth noting that the little chocolate bow ties on the top (which actually resemble little melted stick figures, don’t you think?) were the least offensive part of the entire dessert — so chocolate fans can rejoice in that part, we suppose?

The Verdict

Honestly, if you’re craving KFC’s fan-favourite biscuits, just straight-up buy one of them, sans goopy cinnamon sugar and chocolate stick figures/bow ties. If you’re craving Cinnabon, just go to Cinnabon — and the two shall never meet.

Start Your Morning on a Sweet Note With These Gooey Cinnamon Buns

This is an overnight dough, which means you can make these tonight to enjoy tomorrow. What are you waiting for?

Overnight Cinnamon Rolls With Brown Butter Cream Cheese Icing

Prep Time: 40 minutes
Resting Time: 12 hours
Bake Time: 38 minutes
Total Time: 13 hours, 18 minutes
Servings: 8 cinnamon rolls

Ingredients:

Dough
1 Tbsp active dry yeast
1 cup warm milk
¼ cup white sugar, divided
3 ½ cup bread flour
¾ tsp kosher salt
6 Tbsp unsalted butter, melted
2 large eggs, beaten

Filling
¾ cup brown sugar
1 ½ Tbsp ground cinnamon
6 Tbsp unsalted butter, melted

Icing
6 Tbsp unsalted butter
4 ounces cream cheese, room temperature
1 ¼ cup icing sugar
Pinch kosher salt
1 Tbsp heavy cream
½ tsp vanilla extract

Directions:

Dough
1. In a medium bowl, whisk together the yeast, milk and 1 Tbsp of white sugar. Cover with a kitchen towel and let proof for 5-10 minutes until foamy.

2. In a large bowl, whisk together the bread flour, remaining white sugar and salt.

3. In the bowl of a stand mixer with the paddle attachment, add the milk mixture and dry ingredients. On low, slowly stream in the butter and eggs. Once the dough starts to come together, switch to the dough attachment and knead on low for 10 minutes until soft and smooth. Form the dough into a round ball, cover tightly with plastic wrap and let proof overnight.

Filling
1. In a medium bowl, mix together the brown sugar and ground cinnamon. In another bowl, melt the butter and set aside to cool.

Assembly
1. Butter a 10-inch round pan or any pan of your choice and set aside.

2. Place the dough on a lightly floured surface, lightly flour your rolling pin and roll out into a rectangle (about 17 x 14 inches).

3. Brush the dough with the melted butter and sprinkle generously with the brown sugar cinnamon mixture. Leave about a 1 cm border to allow the dough to adhere to each other when rolled.

4. Start with the longest edge nearest to you, tightly roll the dough away from you into a firm log. Pinch the seams together and set the log seam side down.

5. With a serrated knife or unflavoured dental floss, trim off the ends and cut the dough into 2-inch rolls — you should get about 7-8 rolls. Transfer the rolls to the greased pan, cover with a kitchen towel and let rise for another 15-20 minutes, until they’ve doubled in size.

6. Preheat the oven to 350°F. Bake for 35-38 minute until golden brown and bubbly.

Icing
1. In a small saucepan, melt the butter and cook over medium-high heat, swirling the pan occasionally, until it gets foamy and turns a beautiful golden brown, about 4-5 minutes. Transfer to a bowl and set in the fridge to cool and slightly solidify.

2. In the bowl of a stand mixer with the paddle attachment, mix together the cream cheese and brown butter. Add the icing sugar, salt, heavy cream and vanilla and whip for 30 seconds until light and fluffy.

3. Spread the brown butter icing on the cinnamon buns as soon as it comes out of the oven. Serve warm.

You Haven’t Lived Until You’ve Tasted Butter Tart Cinnamon Buns

Cinnamon buns are delicious. It’s just my opinion, but I haven’t found a single soul who disagrees. The warm, buttery, fluffy buns are hard to say ‘no’ to (anyone who does has an inordinate amount of willpower!).  I know this is going to sound crazy, but this recipe makes the traditional cinnamon bun yesterday’s news. We take your grandma’s cinnamon buns to a whole new level by adding a butter tart filling. Gorgeous buns are baked in a sweet mess, so when they’re flipped, they drip with butter tart goodness. You’re welcome!

Butter Tart Cinnamon Buns

Prep Time: 40 minutes
Total Time: about 4 hours
Makes: 12 buns

Ingredients:
Dough:
3/4 cup buttermilk
1/4 cup granulated sugar
8g packet dry active yeast
1/4 cup butter, softened
3 eggs
4 – 4 1/2 cups all-purpose flour

Butter Tart Glaze:
1/2 cup brown sugar
1/2 cup corn syrup
2 tsp vanilla
1 egg
3 Tbsp butter, melted
1/2 tsp salt

Filling:
1/2 cup butter, softened
1 cup brown sugar
1 Tbsp cinnamon

Butter Tart Cinnamon Buns

Directions:
1. Warm buttermilk over low heat until just slightly warmer than room temperature.

2. Pour into the bowl of a stand mixer fitted with a dough hook. Mix sugar into buttermilk and add yeast. Let stand until mixture becomes foamy on the surface, about 10 minutes.

3. Add in butter and eggs and stir to combine. Add in flour, 1 cup at a time until a soft, pliable dough forms. If dough is tacky, continue adding flour until smooth.

4. Form dough into a ball and transfer into a large greased bowl. Set in a warm place and cover with a dish towel. Let dough rise until double in size, about 1 hour 30 minutes – 2 hours.

5. To make the butter tart glaze, mix all the ingredients in a bowl until combined. Pour into a large baking dish.

6. To make the filling, mix cinnamon and sugar. Place dough onto floured surface and roll into a 20 x 12 inch rectangle.

7. Spread butter edge to edge on the dough and sprinkle cinnamon sugar mixture over top. Roll from the longer edge of the rectangle until a large snake is formed.

8. Cut 12 equal portions from the roll and arrange in baking dish with butter tart filling. Cover with a dish towel and let rise until buns have doubled in size, about 1 hour.

9. While buns are rising, preheat oven to 350°F. Bake until golden brown and baked through, about 30 minutes. Remove from oven and let cool for 15 minutes.

10. Serve each bun flipped so the butter tart bottom is on top.

Make Your Home Hygge with Scandinavian Cardamom Buns

Cardamom buns are a Scandinavian specialty widely available in cafés and bakeries in Nordic regions like Sweden and Denmark. I think of them as a more twisted, texturally interesting, tender-to-the-tooth cinnamon bun with spicy floral notes and eye-catching beauty. The cardamom-spiked dough, filling and glaze bring hygge vibes and cozy winter appeal to your kitchen, perfect for fika (the Swedish coffee break), a lazy winter weekend or your holiday brunch spread.

The cardamom buns I enjoyed in Scandinavia use whole black cardamom seeds in the dough and filling, which I’ve found in some specialty food stores and online. The whole seeds add candy-like crunch and big, bold cardamom flavour, but they are harder to track down, so I’ve developed this recipe with ground cardamom. Just make sure your ground cardamom is as fresh as possible for the biggest bang for your buck. This recipe is all about the spice, and as fragrant as it may be raw, it does dissipate during baking — don’t be afraid of the large amount used in this recipe. 

Scandinavian Cardamom Buns

Prep Time: 25 minutes
Rise Time: 1 hour 45 minutes
Bake Time: 15 minutes
Total Time: 2 hours 25 minutes
Makes: 15 to 20  

Ingredients: 

Dough
1 cup, plus 1 Tbsp whole milk, heated to 110°F
2 ¼ tsp active dry yeast
3 ¼ cup all-purpose flour, plus more for dusting
⅓ cup dark or light brown sugar
1 Tbsp ground cardamom
Pinch, kosher salt
75 g salted butter, room temperature
Oil, for greasing bowl 

Filling
65 g salted butter, room temperature
⅓ cup dark or light brown sugar
1 Tbsp ground cardamom
1 tsp ground cinnamon
1 tsp vanilla extract 

Glaze and Sugar Sprinkle
¼ water
¼ cup light or dark brown sugar
1 tsp ground cardamom
1 tsp vanilla extract
1 tsp to 1 Tbsp granulated sugar

Directions: 

Dough
1. Place warmed milk in a heat-proof bowl and sprinkle over yeast. Allow yeast to activate for 10 minutes while you prepare the dry ingredients.

2. In the bowl of a stand mixer, stir together flour, brown sugar, cardamom and salt. Fit mixer with the dough hook, turn on low and slowly add milk and yeast. With the mixture running, add pieces of the room-temperature butter until incorporated, and then turn to medium-low speed. Knead on medium-low speed for 5 minutes, until the dough is springy but still soft.

3. Transfer dough to a large oiled bowl, cover with a damp cloth and allow to proof in a warm area of your kitchen away from drafts for at least 1 hour, up to 1 hour 30 minutes.

Filling
1. Cream all filling ingredients in a medium bowl until combined. Set aside.

Assembly
1. Line 2 large rimmed baking sheets with parchment paper.

2. Sprinkle a clean surface with additional flour and turn out dough. Flour rolling pin and roll into a rough rectangle approximately 13 inches by 21 inches. Evenly spread over filling using an offset spatula all the way to the edges.

3. Using a ruler or by eye, cut into 15 to 20, ¾-inch- to 1-inch-wide strips, from long edge to long edge.

4. With the filling facing towards your fingers, wrap each dough strip around two to three fingers, three to four times, creating twists and small layers in the dough as you go for a taller bun, leaving a small strip to fold between your fingers and tuck in the bottom of the bun to secure. Repeat with remaining dough and spread formed buns evenly out on the prepared baking sheet, leaving room to expand.

5. Cover baking sheets with a clean damp kitchen towel, place away from drafts and allow to rise for 45 minutes to 1 hour.

Baking and Glazing
1. Position oven racks to accommodate two baking sheets with good airflow. Preheat oven to 425ºF.

2. While buns are proofing, for the glaze, combine water, brown sugar and cardamom in a small saucepan over medium heat until brown sugar is dissolved. Remove from heat and stir in vanilla. Set aside.

3. Bake for 12 to 15 minutes, rotating baking sheets halfway through, top to bottom and vice versa, until tops are golden brown and buns are bubbling in the centre. Do not over- or under-bake. Immediately after they come out of the oven, brush with all of the glaze and sprinkle with sugar. Allow to sit for at least 5 minutes, then enjoy warm or room temperature, storing loosely covered for up to 12 hours (see Notes for make-ahead option).

Notes:
1. The baked cardamom buns are best the day they are made, but can be frozen (once cool and the glaze is set) for up to 1 month. Defrost at room temperature or in a low oven.

2. Prepare the dough and filling the day before up until rolling (after the first proof; stopping before Assembly in directions). Cover each bowl tightly or transfer to airtight containers and refrigerate for up to 1 day. Bring to room temperature before rolling, filling and forming.

How to Make Cinnamon Buns in 5 Easy Steps

This is my great-aunt’s method, which is so easy that even kids can help! When I was young, it was always my job to grease the pan with butter before the buns went into the oven.

You’ll need:
• flour for dusting
• ready-made dough, homemade or store-bought
• rolling pin
• 3/4 cup (175 mL) packed brown sugar
• 1/2 cup (125 mL) soft butter
• 1 to 2 tbsp (15 to 30 mL) cinnamon
• pastry brush
• butter for greasing
• sharp knife
• tea towel

1. Roll Out Dough
On a floured work surface, using rolling pin, roll out dough to about 1/2-inch (1 cm) thickness, forming a rectangle.

Mix together brown sugar, butter and cinnamon until very soft but not melted. Using pastry brush, brush dough with brown sugar mixture. Gently roll up dough, jelly roll–style, ending with seam side down.

3. Cut Into Buns
Using a sharp knife, cut dough into 1-inch (2.5 cm) thick slices.

4. Assemble in Pan and Let Rise
Place, cut side down, in a well greased 13×9-inch (3 L) baking dish. (Aunt Lucy would hand me an empty butter foil to scoop up soft butter with and smear inside the pan.) Cover with a tea towel; let rise until doubled in size, about 25 to 30 minutes.

5. Bake and Turn Out
Bake in 350°F (180°C) oven until golden, 25 to 30 minutes. Let cool slightly. Carefully turn buns out onto parchment or waxed paper. They should come out as one piece with gooey cinnamon-sugar sauce resting on top.

There’s no doubt that the smell freshly baked cinnamon buns is one of the most intoxicating aromas. Not only do they smell amazing, they also deliver in yumminess, gooeyness, and fluffiness all at once. But if you could keep all that tasty flavour and give your cinnamon bun a whole new look?

Banana Stuffed Cinnamon Rolls

Banana Stuffed Cinnamon Buns
If you dream of banana split ice cream sundaes, this recipe is for you. Serve this recipe warm, with a scoop of vanilla ice cream, and you’ll forget about banana splits for good. To make it, unravel cinnamon roll dough to form long strips. Peel bananas and carefully wrap one strip of dough around each banana. Arrange on a cookie sheet and bake at 350°F for 20 minutes. Drizzle with honey or caramel and serve with ice cream.

Cinnamon Roll Waffles
You can skip out on making the batter for these amazing waffles. All you have to do is heat your waffle iron and place one cinnamon roll in the centre, cooking for 3-4 minutes. To make the almond butter glaze, stir 2 Tbsp of milk with 2 Tbsp of almond butter, then whisk in 3/4 cup of icing sugar until smooth. Remove waffles from press and drizzle with almond butter.

Apple Cinnamon Coffee Cake
This deliciously moist coffee cake is super easy to prepare. Peel and dice 2 granny smith apples. In a medium skillet heated over medium, melt 2 Tbsp of butter with 1 cup of brown sugar. Place diced apples and cook until caramelized, about 10 minutes. Meanwhile, dice 2 cans worth of cinnamon rolls into 1-inch pieces. Place them in a 9×9-inch cake pan. Whisk 4 large eggs with 1/2 cup of milk and pour over cinnamon roll pieces. Pour the caramelized apples over mixture. Bake in a 350°F oven for 35 minutes. Drizzle with icing if desired.

Cranberry Upside-Down Cake

This tasty cake feels elegant and festive, but the recipe is so easy, you can basically make it in your sleep. Then, of course, you’ll be waking up to this sweet and tart, moist upside-down cake. To make it, combine 1/4 butter and 3/4 cup brown sugar in a small saucepan heated over medium. Once melted add 1 cup of cranberries (fresh or frozen) and cook for about 10 minutes. Remove from heat and stir in another 1/2 cup of cranberries. Transfer mixture into a well-greased 8-inch cake pan. Cut cinnamon rolls into 2-inch pieces and place over top of the cranberry mixture. Bake in a 350°F oven until buns are cooked and browned on top, about 40 minutes. Let cool in cake pan for 15 minutes, then flip onto a plate so cranberries are on top.

Peanut Butter Cinnamon Bun Pretzels
It’s a mouthful to say, but it’s also something you’ll want to stuff your face with! Unroll each cinnamon roll into long strips. Smear 1 Tbsp of peanut butter (I like crunchy) on each one. Fold the strips over onto each other to half the length. Twist each roll several times while stretching slightly. Form into a circle, then cross the ends to form into a pretzel shape. Bake in a 350°F oven for 20 minutes. Let cool slightly and drizzle each with icing.

Cinnamon Nutella Babka
This babka is beyond decadent and will have your guests fooled that it took less than 5 minutes to prep this recipe. To make it, unravel cinnamon buns into long strips of dough. Arrange strips side by side to form a long dough surface. Smear 1/4 cup of Nutella along surface. Twist dough several times to form a long twisted rope. Spiral the rope into 1 big circle. Place on a lined cookie sheet, and bake in a 350°F oven until browned and cooked through, about 30 minutes.
