Basque Burnt Cheesecake Recipe

Prep Time: 15 minutes
Bake Time: 50 to 60 minutes
Total Time: 1 hour and 15 minutes
Servings: 10 to 12

Ingredients:

3 ½ cups (875 g) cream cheese, room temperature
1 ¼ cup granulated sugar
4 large eggs, room temperature
1 ½ cups heavy cream
1 Tbsp vanilla bean paste
½ tsp salt
⅓ cup + 2 Tbsp all-purpose flour

Directions:

1. Preheat oven to 450°F. Line a 9-inch springform pan with 2 15×18-inch sheets of parchment paper, making sure the parchment comes up the sides all the way around the pan.

2. In the bowl of a stand mixer with the paddle attachment, cream the cream cheese until light and smooth, about 2 minutes. With the mixer on medium-low, stream in the granulated sugar. Cream until the sugar has dissolved, another 1-2 minutes. Scrape down the sides.

3. Increase the speed to medium and add the eggs, one at a time, making sure it’s fully incorporated and scraping down the sides of the bowl before adding the next.

4. Reduce the speed to medium-low and stream in the heavy cream. Add the vanilla and salt and scrape down the sides of the bowl again. Mix until smooth and creamy, another 10-15 seconds. Remove from the mixer and sift in the flour over top. Use a spatula to fold in the flour until just combined.

5. Transfer the mixture to the prepared pan and bake in the oven for 50-60 minutes until the top is deeply golden (resembling a burnt top), the cake has puffed up and the centre is still jiggly.

6. Let cool in the pan for 40 minutes then remove from the springform pan and let cool completely on a wire. Carefully peel off the parchment paper, cut into slices and enjoy!

Kardea Brown’s Big Apple Crumb Cheesecake

Total Time: 5 hours, 10 minutes (includes cooling and chilling time)
Yields: 8 to 10 servings

Ingredients:

Nonstick cooking spray, for the pan
15 graham crackers (or 2 cups crushed graham cracker crumbs)
3 Tbsp packed light brown sugar
1/4 tsp kosher salt
5 Tbsp unsalted butter, melted and cooled

Apple Crumb Topping:
1 1/2 cups all-purpose flour
1/2 cup packed light brown sugar
1 tsp ground cinnamon
1/4 tsp kosher salt
1 stick unsalted butter, melted and cooled
1 tart apple, peeled, cored and diced

Cheesecake Filling:
1 cup granulated sugar
2 Tbsp cornstarch
Pinch kosher salt
Three 8-ounce packages cream cheese, at room temperature
1 cup sour cream
3 large eggs plus 1 large egg yolk, at room temperature
2 tsp vanilla extract
Store-bought caramel sauce, for serving

Directions:

1. For the graham crust: Preheat the oven to 350°F. Lightly spray a 9-inch springform pan with nonstick cooking spray and place on a baking sheet.

2. Add the graham crackers to a food processor and pulse until fine, then add the brown sugar and salt and pulse until well combined. Drizzle in the melted butter and stir until the mixture resembles damp sand. Press the crumbs into the bottom of the prepared springform pan in an even layer. Bake the crust until firm, about 10 minutes, then let cool.

3. For the apple crumb topping: Stir together the flour, brown sugar, cinnamon and salt in a medium bowl. Drizzle in the butter and stir until the mixture resembles wet sand, using your hands to form some clumps. Fold in the diced apple.

4. For the cheesecake filling: Stir together the granulated sugar, cornstarch and salt in a small bowl. Pulse together the cream cheese and sour cream in a food processor until smooth. With the processor running, add the sugar mixture 1/2 cup at a time until the mixture is smooth. Add the eggs and yolk one at a time, pulsing until well combined, then add the vanilla, scraping down the sides of the processor and giving it another pulse to make sure everything is incorporated. Pour the cheesecake filling over the top of the graham cracker crust.

5. Sprinkle the crumb topping over the filling. Bake the cheesecake until it is mostly set but still has a bit of a jiggle in the center, 60 to 70 minutes. Turn off the oven and leave the oven door slightly open for 1 hour. Remove the cheesecake from the oven and allow to cool to room temperature, about another hour, then refrigerate for 1 hour more. Run a paring knife around the outside before unmolding and slicing. Serve drizzled with the caramel sauce.

These Flaky Strawberry Rhubarb Cheesecake Pastry Pockets Are So Fun to Make

It’s rhubarb season! What better way to celebrate this wonderful fruit than with homemade jam to enjoy on just about anything? For this week’s Baking Therapy recipe, I’m making strawberry rhubarb cheesecake pastry pockets. They’re flaky, sweet, a little tart and so fun to make. These are definitely my new favourite spring treat.

Strawberry Rhubarb Cheesecake Pastry Pockets

Prep Time: 45 minutes
Resting Time: 1 hour
Bake Time: 18 to 20 minutes
Total Time: 2 hours, 5 minutes
Servings: 6 pastry pockets

Ingredients:

Dough
2 cups all-purpose flour
1 Tbsp white sugar
¾ tsp salt
1 cup (2 sticks) unsalted butter, chilled and cubed
1 cup ice water
3 tsp apple cider vinegar

Jam
2 cups strawberries, chopped
1 cup rhubarb, chopped
1 cup raspberries
½ cup white sugar
¼ cup maple syrup
Juice of 1 lemon (about 2 to 3 Tbsp)
1/8 tsp salt
2 Tbsp vanilla extract

Cheesecake
½ cup cream cheese, room temperature
¼ cup icing sugar

Egg Wash
1 egg
1 Tbsp milk

Glaze
2 Tbsp cream cheese, room temperature
1 Tbsp milk
1 cup icing sugar
1 Tbsp strained jam (from above)
½ tsp vanilla
Sprinkles (optional)

Directions:

Dough
1. In a large bowl, whisk together the flour, sugar and salt. Add the chilled, cubed butter and work into the flour by rubbing between your fingers until you have pea-sized bits throughout.

2. In a measuring cup, mix together the ice water and apple cider vinegar. Adding a Tbsp at a time, mix into the flour mixture. The dough should hold when pressed together (it’s okay if the dough looks slightly dry, it will hydrate while it rests).

3. Transfer the dough onto plastic wrap. Using the plastic, press to form the dough together into a square shape. Wrap tightly and chill in the fridge for at least 30 minutes.

Jam
1. In a large saucepan, add the strawberries, rhubarb, raspberries, sugar, maple syrup, lemon juice and salt. Cook on medium-high for about 20 minutes, stirring constantly until the berries break down and the mixture starts to thicken.

2. Remove from heat, stir in the vanilla. Transfer to a dish and put into the freezer for 15 to 20 minutes to chill quicker.

Cheesecake
1. Mix together the cream cheese and icing sugar, set aside.

Assembly
1. Lightly flour your work surface and roll out the dough to about 12 by 12 inches and trim off the edges.

2. With a knife or a pastry cutter, cut the dough into 12 rectangles, about 3 inches by 4 inches. Transfer the dough to parchment paper.

3. Whisk together the egg and milk for the egg wash. Brush the borders of 6 rectangles with egg wash.

4. In the centre of each of those rectangles, dollop about 1 to 2 Tbsp of jam and 1 Tbsp of cheesecake filling. Make sure to save 1 Tbsp of jam for the glaze.

5. Roll out the remaining 6 rectangles, to they’re slightly larger than the bottom pieces. Place them on top and press down along the edges with your fingers. Take a fork and crimp the edges all the way around to seal.

6. Freeze for at least 30 minutes and preheat oven to 400°F.

7. Brush the tops with egg wash and with a fork, poke the tops of the pockets to create a few vents. Bake for 18 to 20 minutes until lightly brown.

8. Transfer to a cooling rack.

Glaze
1. Whisk together the cream cheese, milk, icing sugar, strained jam and vanilla until smooth and viscous. If it’s too thick, add a little more milk.

2. Spoon on top of cooled pastry pockets. Add sprinkles if you desire. Enjoy!

In the new Food Network Canada series The Substitute Baker, celebrated Toronto-born holistic nutritionist Sarah Britton shows us just how easy it can be to adapt your favourite recipes to suit any occasion or special dietary needs.

For starters, she’s crafted this bold, gorgeous and positively mouth-watering plant-based cheesecake recipe that will make you look like a well-seasoned baker.

Healthy Raspberry Cashew Cheezecake

Ingredients:

Crust
1 cup/150g toasted sunflower seeds (almonds, pecans or walnuts also work)
¼ cup/35g cacao nibs
1 cup/250g soft dates, pitted
2 Tbsp raw cacao powder
¼ tsp sea salt

Filling
2 cups/300g raw cashews, soaked overnight
3 Tbsp freshly squeezed lemon juice
Seeds of 1 whole vanilla bean (or 1 tsp vanilla extract)
½ cup/125ml virgin coconut oil
½ cup/125ml raw honey
Pinch sea salt
1½ cups frozen raspberries (thaw slightly)

Decorations
30g dark chocolate, melted
Handful of dried raspberries, crushed

Directions:

1. Place seeds, cacao nibs, cacao powder and dates in a food processor with sea salt and pulse to chop until they are to your desired fineness (process a finer crust longer than a chunky one). Test the crust by spooning out a small amount of mixture and rolling it in your hands. If the ingredients hold together, your crust is perfect (if it’s too dry, add more dates, if it’s too wet, add more seeds).

2. Reserve ¼ cup of your crust to use as decorations later and transfer the remaining crust mixture to a lightly greased (with expeller-pressed coconut oil) and parchment-lined 7.5” (19cm) spring-form pan. Press the mixture firmly, making sure that the edges are well packed and that the base is relatively even throughout. Use a flat-bottomed drinking glass or bottle to help press the crust into the pan evenly. Use the reserved mixture to make balls of different sizes that you will use as decorations later. Store these in the fridge until you are ready to serve.

3. Warm coconut oil and honey in a small saucepan on low heat until liquid. Add vanilla and whisk to combine.

4. In the most powerful blender you own (I recommend a Vitamix), place all filling ingredients, except raspberries, and blend on high for 1-2 minutes or until very smooth.

5. Reserve ⅛ cup filling in a small bowl and set it aside. Pour about 2/3 (just eyeball it, you can’t make a mistake!) of the filling out onto the crust and smooth with a spatula. Tap the pan firmly against a hard surface to remove air bubbles. Add the raspberries to the remaining ⅓ of the filling and blend on high until smooth. Pour onto the first layer of filling and tap again to create a smooth surface. Dollop the reserved white filling onto the raspberry layer and swirl with a knife tip. Tap the pan once more to even out the filling, then place the cheezecake in the freezer until solid.

6. To serve, remove from the freezer 30 minutes prior to eating. Remove parchment from base of cake. Decorate with date and seed balls, drizzle with melted chocolate and sprinkle dried raspberries.

Ingredients:
1½ cups recently boiled water
1 cup raw unsalted cashews
1 cup unsweetened shredded coconut
¼ cup unsalted butter or coconut oil
1 to 2 Tbsp keto sweetener or liquid sweetener, to taste
½ tsp lemon zest
1 Tbsp lemon juice
1 cup fresh or frozen raspberries

Directions:
1. Line a 12-count muffin tin with papers.
2. In a high-speed blender, add all ingredients except raspberries and blend until smooth and creamy. Add half the batter to the bottom of the papers. Add raspberries to the remaining half of the batter and puree again until smooth.
3. Top plain cheesecake batter with raspberry batter, and tap the pan a few times to release any air bubbles.
4. Freeze for at least 4 hours, or until set. Unwrap papers and serve frozen.
5. Store in an airtight container in the freezer for up to 2 months.

No-Bake Chocolate Chip Cookies & No-Bake Oatmeal Cookies

Prep Time: 20 minutes
Chill Time: 1 hour
Total Time: 1 hour 20 minutes
Makes: 3 dozen

Ingredients:

No-Bake Cookie Base
4 cups unsweetened shredded coconut
1 cup unsalted nut butter (almond butter, peanut butter, etc.)
½ cup maple syrup
½ cup coconut flour
¼ cup unsweetened plain almond milk
¾ tsp fine-grain salt

No-Bake Chocolate Chip Cookies
1 recipe No-Bake Cookie Base (from above)
1 cup semi-sweet or dark chocolate chips
flaky sea salt, to taste

No-Bake Oatmeal Raisin Cookies
1 recipe No-Bake Cookie Base (from above)
1 cup gluten-free rolled oats
¾ cup raisins
½ tsp ground cinnamon

Directions:

No-Bake Cookie Base
1. In a food processor, blend coconut until it resembles the smooth and creamy consistency of almond butter (you are making coconut butter), stopping the machine to scrape down the sides several times. This will take about 10 minutes.
2. To the coconut butter, add nut butter, maple syrup, coconut flour, almond milk and salt. Blend until a dough forms. Transfer dough to a large bowl.

No-Bake Chocolate Chip Cookies
1. To the cookie base, add chocolate chips and mix well.
2. Scoop 2- to 3-Tbsp portions of dough onto a cookie sheet. Roll dough into balls and sprinkle with flaky salt.
3. Transfer to the refrigerator and chill for 2 hours.
4. Store airtight in the refrigerator for up to 1 week, or freeze for up to 2 months. These taste best cold.

No-Bake Oatmeal Raisin Cookie
1. To the cookie base, add oats, raisins and cinnamon and mix well. If the mixture seems too dry to compress (flours vary in absorbency), add an additional 1 Tbsp or more of almond milk.
2. Scoop 2- to 3-Tbsp portions of dough onto a cookie sheet. Roll dough into balls and then slightly press down with the palm of your hand.

Carrot Cake and Cheesecake Combine Into One Glorious Dessert

Moist carrot cake topped with rich cream cheese icing is one of life’s sweetest delights. Cheesecake just happens to be another. Here, we’ve created a super fun and easy dessert recipe that combines the two classic cakes. Squares of creamy cheesecake atop tender, spiced carrot cake will have you reaching for another taste – because when you’re offered two desserts in one, second helpings are encouraged.

Carrot Cake Cheesecake Squares

Prep Time: 20 minutes
Bake Time: 40 minutes
Total Time: 1 hour (plus cooling time)
Servings: 16 squares

Ingredients:
1 cup flour
1 tsp baking powder
¾ tsp cinnamon
¾ tsp ground ginger
¼ tsp allspice
¼ tsp baking soda
½ tsp salt, divided
4 eggs, divided, room temperature
½ cup packed brown sugar
½ cup canola oil
1 cup grated carrots
2 tsp vanilla, divided
2 bricks (250 g each) cream cheese, room temperature
⅔ cup granulated sugar
⅓ cup sour cream, room temperature

Directions:
1. Heat oven to 350°F. Spray an 8-inch baking pan with cooking spray. Line with parchment so the paper comes up an inch above pan edges. Set aside.
2. Whisk together flour, baking powder, cinnamon, ginger, allspice, baking soda and ¼ tsp salt in a small bowl.
3. Whisk together two eggs and brown sugar in a large bowl. Add oil and whisk to combine. Stir in flour mixture until combined. Stir in carrots and 1 tsp vanilla. Spread mixture into prepared pan. Set aside.
4. Beat together cream cheese and granulated sugar in a large bowl with a hand mixer on high until well combined and fluffy, scraping down bowl occasionally. Add remaining eggs, one at a time, on low speed, scraping bowl between additions. Stir in sour cream along with remaining salt and vanilla.

5. Pour mixture gently over carrot mixture, spreading evenly to edges of pan. Bake for 35 to 40 minutes, until the centre jiggles slightly when gently shaken.
6. Turn oven off and prop door ajar with a wooden spoon for 1 hour. 7. Remove pan to a wire rack to cool completely, about 1 hour.
8. Refrigerate at least 2 hours. Lift from pan by parchment edges and cut into squares to serve.
9. Tip: If you like your carrot cake with some crunch or tender sweetness, add a half cup of chopped walnuts or raisins with the carrots to add another dimension of taste and texture.

No-Bake Vegan Strawberry Cheesecake Bites

Ingredients:

Crust (makes 24 mini cheesecakes)
1 cup pecans
6 medjool dates
1/4 cup shredded coconut
1/4 tsp sea salt

Filling
1 cup raw cashews (soaked for 3 hours)
1/2 cup frozen strawberry slices
1/4 cup agave nectar
1/4 cup coconut oil (melted)
2 Tbsp lemon juice

Swirl/Topping
1/2 cup frozen strawberries, melted

Directions:

Crust
1. Remove the pits from the medjool dates and soak them in warm water for 10 minutes. Drain the water from the dates and place in a food processor along with the remaining ingredients. Process until the nuts are crumbled and the crust is sticking together on its own.
2. Press about 1 1/2 tsp of the mixture into the bottom of each mini muffin cup.

Tip: To remove the cheesecakes easily from the tray, cut 4-inch strips of parchment paper and place those in the bottom of each cup. Press the crust mixture on top of these. Then when the cheesecakes are done setting in the freezer, you can pull on the parchment tabs to lift the cheesecakes out.

Filling
1. Drain cashews from the soaking water and rinse under fresh water. Then add them to a high speed blender or Vitamix along with frozen strawberries, agave nectar, melted coconut oil, and lemon juice. Blend until smooth.
2. Pour this mixture into a bowl and set aside. Clean out the blender to make the strawberry puree for the swirl.

Swirl/Topping
1. Allow these strawberries to melt at room temperature or heat over low heat in sauce pan for a few minutes until soft. Then blend this in a blender into a smooth purée.
2. Take a scant Tbsp of the cashew filling and pour on top of the pressed crust. Then take 1/2 tsp of strawberry purée and dollop on top of the cashew filling. Take the end of a toothpick and swirl the two mixtures around to make a fun artsy pattern!
3. Freeze the cheesecakes for 1-2 hours until solid. Remove them from the mini muffin trays and allow to thaw for 10-15 minutes before biting into them.

½ cup dry roasted peanuts

Directions:
Crust
1. Preheat your oven to 350°F. Lightly spray a 13×9-inch pan with nonstick cooking spray and line with parchment paper.
2. In the work bowl of a food processor, pulse together cookies, sugar, and salt until small crumbs remain. Pour in melted butter and pulse until combined.
3. Press into bottom of prepared pan. Bake until lightly golden brown, about 10 minutes. Let cool completely.

Filling
1. Place chopped chocolate in a medium bowl. In a small saucepan, heat ½ cup heavy cream over a medium heat. Bring to a simmer. Pour over chocolate and let stand 2 minutes. Slowly stir together until combined. Let cool completely.
2. In a large bowl, beat cream cheese and sugar with a mixer at medium speed until smooth. With the mixer running, gradually add remaining 1¾ cup cream, beating until fluffy, about 3 minutes. Beat in pudding mix until combined.

Rhubarb Raspberry Cheesecake Adds a Pop of Spring to Your Easter Table

After months of snow, rain, and grey skies, rhubarb bursts onto the scene with its beautiful colour and tart, refreshing flavour. As soon as we spot those ruby red stalks at the market, we know spring is finally here! A bit sweet, slightly tart and extremely vibrant, rhubarb brightens up all of our favourite desserts and pastries – and this cheesecake is no exception.

Against a canvas of creamy white cheesecake, this jewel-toned rhubarb raspberry coulis pops off the plate. A hint of lemon would pair wonderfully in the cheesecake filling, but we love pure vanilla bean to round out all of the tangy flavours of the rhubarb and raspberry. A classic graham cracker crust and sour cream topping keep the slices clean and elegant for a sweet spring or Easter celebration.

Rhubarb Raspberry Cheesecake

Prep Time: 45 minutes
Bake Time: 1 hour 35 minutes
Cooling Time: 6 hours

Ingredients:

Crust
1¾ cups graham cracker crumbs
¼ cup granulated sugar
5 Tbsp unsalted butter, melted

Cheesecake Filling
1½ lbs cream cheese, at room temperature
1 cup granulated sugar
¼ tsp salt
Seeds from 1 vanilla bean or 2 tsp vanilla extract
3 large eggs, room temperature
1 cup plus 2 Tbsp sour cream, room temperature

Cheesecake Topping
1¼ cups sour cream
¼ cup granulated sugar

Rhubarb Raspberry Coulis
1½ cups sliced rhubarb (fresh or frozen)
½ cup raspberries (fresh or frozen)
¼ cup granulated sugar, or to taste
2 Tbsp lemon juice
1 tsp cornstarch

Directions:

Crust:
1. Preheat oven to 325ºF.
2. Add the crumbs to a mixing bowl along with the sugar. Add the melted butter and stir to combine.
3. Pour the crust mixture into the bottom of a 9-inch springform pan. Press the crust into an even layer on the bottom of the pan using your fingers tips or the bottom of a flat measuring cup or drinking glass.
4. Bake for 15 minutes. Cool completely on a wire rack as you prepare the filling.

Cheesecake Filling:
1. Increase the oven to 350ºF. Bring 4 to 6 cups of water to a boil (enough to halfway fill a large roasting pan) and set aside. Place a large roasting pan on the very bottom rack of your oven. Place a second rack just above the roasting pan.
2. Meanwhile, place the cream cheese in the bowl of an electric mixer. Using the paddle attachment, mix the cream cheese on medium-low for 4 to 5 minutes, or until completely smooth. Stop and scrape down the bowl every couple of minutes.
3. Add the sugar, salt and vanilla bean seeds or extract into the cream cheese and mix for another 3 to 4 minutes. Stop the mixer and scrape down the bowl. Mix for another 30 to 60 seconds to smooth out any lumps.
4. With the mixer on low, add the eggs one at a time. Allow each egg to fully incorporate into the batter before add in the next. Stop the mixer and scrape down the bowl.
5. Add the sour cream. Mix on medium-low until the batter is creamy and uniform, about 2 minutes.
6. Pour the batter into the cooled crust. Smooth out the top as needed. Tap the bottom of the cake pan on top of the counter a few times to expel any trapped air bubbles. Wrap the sides of the pan in a double layer of aluminium foil.
7. Very carefully pour the recently boiled water into the roasting pan. Place the baking pan on the rack above the roasting pan and bake for 1 hour. When done, the sides should be puffed and set while the centre should jiggle when the pan is moved. If it is not ready, check again after an additional 10 minutes of baking. Once done, turn the oven off and prop the door open with a wooden spoon. Allow the cake to cool inside the humid oven for about 45 minutes. Once cool, remove the cake from the oven and place on a wire rack.

Cheesecake Topping:
1. Turn the oven back on to 350ºF. As the oven heats back up, combine the sour cream and sugar for topping the cheesecake. Carefully spread the topping over the top of the cheesecake with a small offset spatula. Return the topped cheesecake back to the oven and bake for 10 minutes.
2. Turn off the oven and again prop open the door with a wooden spoon. Allow the cake to cool in the oven for 10 to 15 minutes before placing it on a wire rack. Let cool for an additional 30 minutes then place in the refrigerator. Drape a piece of parchment paper over the top of the cheesecake to prevent condensation from forming and chill for at least 4 hours or overnight (best).

Rhubarb Raspberry Coulis:
1. Place the rhubarb and raspberries in a saucepan over medium heat. Add the sugar and cook until the fruit begins to break down and juices begin to simmer about 5 to 10 minutes.
2. Meanwhile, dissolve the cornstarch in the lemon juice. Stir the lemon juice mixture into the rhubarb and cook for a few minutes. Remove the mixture from the stove and blend until smooth. Press the puree through a fine-mesh sieve to remove the raspberry seeds. Store in the refrigerator until ready to use.

Assembly and Serving:
1. To release the cheesecake from the pan, carefully run a thin knife around the edges of the cake before unlocking the springform pan. Warm a metal spatula under hot water, dry, then run it around the edges of the cheesecake to smooth.
2. Slice cheesecake into wedges, cleaning your knife in between slices, and add to plates. Top with a generous drizzle of coulis and serve.

Directions:

Homemade Graham Crust
1. Preheat oven to 350ºF.
2. In a medium bowl, mix flour, sugar, bran, cocoa and cinnamon until combined. Mix in vegan butter or oil and agave or maple syrup until fully combined. Firmly press into a 7-inch springform pan.
3. Bake for 15 to 20 minutes, until golden brown and beginning to crack on top. Cool completely.

Filling
1. In a medium saucepan, bring apple juice, sugar and agar agar to a boil, reduce to medium and cook, stirring a few times, for 5 minutes, or until agar agar flakes are completely dissolved. Keep warm.
2. In a food processor, purée tofu until completely smooth, about 1 minute. Add apple juice mixture, lemon juice and vanilla. Purée until fully combined and pour into prepared crust. Cool to room temperature and refrigerate for at least 8 hours, until set.

Crust:
1. Preheat oven to 350ºF. Line an 8×8-inch baking pan with parchment paper.
2. In a medium bowl, combine oats, flour, coconut oil, cinnamon and salt. Mix in coconut oil until combined. Press crust mixture into prepared pan and bake for 15 to 20 minutes, until fragrant and dry on top. Cool completely in pan.

Filling:
1. Add orange juice to a small skillet and sprinkle over gelatin. Heat over medium until gelatin has dissolved and a few bubbles begin to break on the surface, about 1 minute. Reserve.
2. In a large bowl, whisk to combine yogurt, maple syrup, coconut milk, lemon juice, vanilla and orange zest. Slowly whisk in gelatin orange juice mixture.

Anna Olson’s Guide to Making the Perfect Cheesecake

If you’re in charge of hosting the family for Easter brunch or planning a springtime get together, cheesecake is ideal for serving a group. This rich, velvety cake not only makes you look like a hero, it can also be prepared ahead of time. That’s one thing off of your to-do list right before the doorbell rings!

From trying to avoid the dreaded crack in the centre to impressing guests with a stunning homemade dessert, these insider tips and tricks will ensure cheesecake success. Plus, they’ll give you the confidence to jump right into this brand new recipe I’ve got for you!

Here are 5 essential tips for the perfect cheesecake.

1. Ingredient Temperature
Ingredients of a like temperature combine easily and smoothly, so:

a) Pull your cream cheese out an hour before using (cut it into pieces while still cold, spread onto a plate and cover it with plastic.) Do NOT microwave your cream cheese — if it’s too soft on the outside and still cool in the middle, you’ll get lumps in your cheesecake.

b) Warm your eggs up by placing them in a bowl and covering them completely with hot tap water. In 3-4 minutes, those right-from-the-fridge eggs will have warmed up to room temperature without you having to pull them out hours ahead.

2. Scrape Your Bowl!
For a smooth and creamy cheesecake, you need to scrape your bowl often, and after each addition. It might feel tedious to stop the mixer or beaters every minute or two, but it’s a simple task that will result in a velvety and smooth texture.

3. Watch Your Mixing Speed
When beating cream cheese and adding sugar, you can beat on a higher speed. Once you start adding the eggs, reduce the speed to low, so you don’t add too much air. Whipped eggs will soufflé in the oven, and, once the cheesecake starts cooling, those souffleed eggs will fall. This is when a crack can develop, even hours after the cheesecake is out of the oven.

4. Gradual Cooling
Allowing the cheesecake to cool completely to room temperature before chilling is a simple and important step. Accelerating the cooling time by rushing it to the fridge can cause the cheesecake to contract, creating a crack. To check if the cheesecake is cool, touch the bottom of the pan, not the sides.

5. Loosen the Sides of the Cheesecake
By running a palette knife around the inside edge of the springform pan soon after the cheesecake comes out of the oven, you separate the cake from the pan. This way, if the cheesecake does want to contract, it can pull away from the sides of the pan, making it less likely to crack in the middle.

2 large whole eggs
3 large egg yolks (reserve whites for meringue)

1/2 cup (115 g) unsalted butter, cut into pieces

Directions:

Graham Crust:
1. Preheat the oven to 350ºF (180ºC). Lightly grease a 9-inch (23 cm) springform pan.
2. For the crust, stir the graham crumbs, sugar and melted butter together in a bowl until combined and press this into the bottom of the prepared pan. Bake for 10 minutes (no change in colour to note) and cool completely on a rack before filling.

Cheesecake:
1. For the cheesecake, lower the oven temperature to 300ºF (150ºC).
2. Beat the cream cheese until light and fluffy. Beat in the condensed milk, scraping the sides and bottom of the bowl well. Beat in the zest and vanilla, then on a lower speed; beat in each egg and the yolk one at a time. Still on low speed, beat in the lemon juice.
3. Pour mixture over the cooled crust and bake for about 45 minutes, until the outside of the cheesecake is set, but the centre still has a little jiggle to it.
4. Prepare the lemon curd as the cheesecake cools.

Lemon Curd:
1. For the curd, whisk the whole eggs, egg yolks, sugar, lemon zest and juice in a metal bowl. Whisk in the butter and sour cream and place the bowl over a pot of gently simmering water, whisking often, until the lemon curd has thickened (but it will still be fluid), about 10 minutes.
2. Strain the curd and spread this gently over the cheesecake.
3. Once fully cooled to room temperature, chill the cheesecake for at least 6 hours (do not cover with plastic wrap).

Meringue Topping:
1. For the topping, whisk the egg whites and sugar in a metal bowl placed over a pot of gently simmering water until frothy and very warm to touch (165ºF if using a thermometer).
2. Use electric beaters or transfer to the bowl of a stand mixer and whip until the meringue has cooled and holds a stiff peak when the beaters are lifted.
3. Use a butane kitchen torch to brown the meringue or pop it into a 400ºF (200ºC) oven for 3-4 minutes to brown and then cool before refrigerating.

In this recipe, a sweet-tart topping made of sour cherries is layered with a smooth and creamy cheesecake mixture with a hint of almond. To top it off, crunchy graham crumb streusel is sprinkled over top. Ingredients:

Graham Crumb Streusel:
1/3 cup graham cracker crumb
1/3 cup brown sugar
1/3 cup all purpose flour

¼ cup butter, at room temperature

Sour Cherry Sauce:
1/3 cup granulated sugar
2 Tbsp. lemon juice
1 Tbsp.cornstarch
2 cups sour cherries
2 tsp lemon zest

Cheesecake Filling:
½ cup sour cream
1 250 g brick cream cheese
3 Tbsp honey
1 tsp almond extract

Upside-Down Cherry Cheesecake Jars

Directions:

Graham Crumb Streusel:
1. Preheat oven to 350°F. Prepare a baking sheet lined with parchment.
2. In a bowl, combine graham cracker crumb, brown sugar, flour and cinnamon. Work the butter into the dry ingredients using your fingers until pea size clumps being to form, about 1 minute.
3. Pour the mixture onto prepared baking sheet and spread into a single layer.
4. Bake until mixture is golden brown and fragrant, about 15 minutes. Once cooled, break any big clumps into crumbs.

Sour Cherry Sauce:
1. Combine 1/3 cup sugar and lemon juice in a small saucepan heated over medium.
2. Add in cherries and cook until tender and sauce has thickened, about 5 minutes. Add in corn starch and cook until dissolved, about 1 minute.
3. Remove from heat and stir in lemon zest. Let cool.

Cheesecake Filling:
1. In the bowl of an electric mixer, or using a hand mixer, beat sour cream with cream cheese, honey and almond extract on high until smooth and fluffy.
2. Cool in fridge for about 1 hour. Transfer mixture into a piping bag.

Assembly:
1. Pipe one layer of cheesecake mixture into the bottom of each jar. Spoon a layer of sour cherry sauce over the cheesecake mixture. Continue this pattern leaving a 1/2 –inch of space at the top of each jar.
2. You can finish with a cheesecake layer or a cherry sauce layer. Sprinkle graham streusel over top layer of each jar cake.

Tip: If you cannot find fresh sour cherries, they can be replaced with frozen.

Canadian No-Bake Cheesecake Bars

16 oz cream cheese, softened

1/4 cup sour cream
1 1/2 tsp vanilla

Topping
1/2 cup coarse red sugar

Directions:
Base
1. In a small bowl, whisk together butter and food colouring. In a medium bowl, combine graham cracker crumbs and butter mixture. Mix until butter mixture is evenly distributed.
2. Pour into prepared pan and press evenly then set aside.
4. Line a 9-inch square metal baking pan with foil leaving a 2-inch overhang then set aside.

Filling
1. In a small bowl, sprinkle gelatin over water. Microwave on medium heat until dissolved, about 20 seconds.
2. Meanwhile, in a medium bowl and using an electric mixer, whip cream then set aside.
3. In a separate bowl and using an electric mixer, beat cream cheese until light. Add sugar, sour cream and vanilla and beat until combined.
4. Stir gelatin into cream cheese mixture. Fold in whipped cream. Pour over crust, smoothing top.
5. Cover with plastic wrap and refrigerate until set, at least 3 hours or up to overnight.
6. Using foil overhang as handles, remove cheesecake from pan and transfer from foil to serving plate.
7. Cut Cheesecake into 12 pieces.

Topping
1. Place 1 3/4 inch maple leaf cookie cutter in centre of each cheesecake piece.
2. Spoon rounded 1/4 tsp coarse red sugar into centre of cutter.
3. Using tip of knife, gently spread sugar to fill cutter. Remove cutter being careful not to disturb sugar.

Raw Vanilla Cheesecake with Chocolate Almond Crust

This recipe has been in the bank for a long time and I’ve just never divulged my secret. I keep it in my arsenal and always make it for dinner parties to wow my non-vegan friends! It totally works plus they all feel good after eating it. This healthified dessert is definitely a fan favourite and now I’m sharing this little piece of vegan love with you too. Enjoy!

Ingredients:

Chocolate Almond Crust
1 cup raw almonds (soaked at least 3 hours)
1/2 cup raw walnuts
1/3 cup shredded coconut
8 medjool dates, pitted
1/4 cup coconut sugar
1/3 cup coconut oil
2 Tbsp raw cacao powder
1/4 tsp sea salt

Vanilla Cheesecake Filling Ingredients
1 1/2 cups raw cashews (soaked at least 3 hours)
1/3 cup agave nectar (or 1/2 C maple syrup for non-raw version)
1/4 cup lemon juice
1/3 cup coconut oil
1/2 tsp vanilla powder (or the inside of 1 vanilla bean)

Topping
1 cup frozen mixed berries

Directions:

Chocolate Almond Crust
1. Place the almonds and walnuts in a food processor and blend them into a coarse meal. Add remaining ingredients and blend until well combined.
2. Using your hands, press the dough in an even layer into mini tart pans with removable bottoms. Freeze the crusts for 30 mins and make the cheesecake filling.

Tip: If you don’t care about eating a strictly raw dessert, you can poke a few holes in the bottom of the crust with a fork and then bake them for 8-10 minutes at 325°F. The nuts toast up nicely and it gives a yummy overall flavour to the cheesecake that might be more palatable to people who aren’t accustomed to raw food and desserts. Allow the crusts to cool completely before filling them.

Vanilla Cheesecake Filling
1. In a vita-mix or high powered blender, combine all the ingredients until smooth.
2. Remove your crusts from the freezer and pour the filling into them just below the top edge of the crust. Place them back in the freezer for 1-2 hours to set.
3. Before serving the cheesecake allow them to sit out at room temperature for 10 minutes. They can keep for a while in the freezer as well.

Topping
For an easy topping you can just thaw frozen mixed berries at room temperature while you wait for the cheesecakes. Alternatively, you can place fresh mixed berries in a bowl with a mixture of 2 parts lemon juice and 1 part raw agave nectar and let this mixture sit for 30 minutes until it becomes soft and juicy.

Keep blending until it’s very smooth, like a creamy chocolate fudge with no cashew chunks.
    3. Pour smooth mixture into a wide pan (or into silicone molds) and place in freezer.*
    4. Freeze until it reaches a firm, slice-able consistency (8 hours or so).
    5. Store in freezer at all times. To eat, just open the freezer, slice into desired shape and eat immediately.

*Heart-Shape Tips: If you don’t have heart-shaped silicone molds, this simple solution works well. Pour the mixture into a wide pan or glass dish. Smooth the mixture out using the back of a spoon — not too thick and about an inch or less deep. Freeze then slice into heart shapes. This recipe (when frozen for at least 8 hours) is super easy to cut into shapes.

Note: If your blender isn’t very powerful, consider soaking cashews in warm water for 1-2 hours before blending to soften them. After soaking, rinse clean and blend immediately.
