Cranberry Bliss Bars

Prep Time: 15 minutes
Bake Time: 35 to 40 minutes
Total Time: 50 to 55 minutes
Servings: 12 bars

Ingredients:

Shortbread
1 cup (2 sticks) unsalted butter, room temperature
½ cup icing sugar
2 cups all-purpose flour
½ cup crushed pistachios
¼ cup cornstarch
¼ tsp baking powder
¼ tsp salt
1 tsp lemon zest

Filling
2 cups fresh cranberries
½ cup granulated sugar
1 Tbsp cornstarch
1 Tbsp fresh lemon juice
1 tsp lemon zest
1 tsp vanilla extract

Icing
⅓ cup (60g) white chocolate, chopped
¼ cup unsalted butter, room temperature
4 oz cream cheese, room temperature
¾ cup icing sugar
3 Tbsp milk

1. Preheat oven to 350°F. Line and grease 9×9 square pan. Set aside.

2. First, whip up the shortbread. In the bowl of a stand mixer with the paddle attachment, cream together the butter and sugar until light and fluffy, about 2 minutes. Add the flour, pistachios, cornstarch, baking powder, salt and lemon zest. Beat on low until just combined, texture will be crumbly. Reserve 1 cup of mixture for the crumble, press remaining dough firmly into bottom of pan.

3. Now for the filling: in a medium bowl, toss together cranberries, sugar, cornstarch, lemon juice, lemon zest and vanilla extract. Evenly distribute the cranberries onto the cookie layer. Top with the reserved cookie dough and pack down firmly.

4. Bake in oven for 35 to 40 minutes until the top is golden brown. Let cool completely in the pan before slicing.

5. For the icing: place the chopped white chocolate or chips in a small bowl and microwave in 30-second intervals until melted, stirring often. Set aside to cool slightly.

6. In the bowl of a stand mixer with the whisk attachment, cream together the butter and cream cheese. Gradually add in the icing sugar and whisk on high to combine. Add the melted white chocolate and milk and whisk on high for another 30 seconds. Transfer to a piping bag and drizzle over top.

Spooky S’mores Bars

Total Time: 1 hour and 8 minutes
Servings: 12-16 bars

Ingredients:

Marshmallow Meringue
2 egg whites
½ cup granulated sugar
½ tsp cream of tartar
½ tsp vanilla extract

S’mores Bars
1 ½ sticks brown butter
1 ¼ cup all-purpose flour
1 ¼ cup graham cracker crumbs
1 tsp baking powder
¾ tsp salt
¾ cup brown sugar
1 egg
½ cup milk chocolate chips
½ cup semi-sweet chocolate chips
2 Tbsp cocoa powder

Directions:

1. For the marshmallow meringue: in the bowl of a stand mixer, whisk together the egg whites and sugar and place over a double boiler. Whisk constantly until the sugar dissolves and the mixture is hot to the touch, about 5-8 minutes.

2. Remove from heat, mix in the cream of tartar and vanilla. Place in stand mixer with the whisk attachment and whisk on high for 8-10 minutes until the mixture is light, glossy and the bottom of the bowl has cooled to room temperature. Transfer to a bowl and set aside.

3. Preheat oven to 350°F. Grease and line a 9×9 square pan.

4. In a heavy bottom saucepan, melt the brown butter on medium-high. Cook the butter, swirling occasionally until it turns golden brown and nutty, about 8-10 minutes. Transfer the brown butter to a glass bowl and set aside to cool slightly.

5. Whisk together the flour, graham cracker crumbs, baking powder, and salt. Set aside.

6. In the bowl of a stand mixer with the whisk attachment, cream together the brown butter and brown sugar. Add the egg and whisk on medium-high for 5-10 minutes until light and airy. Add the dry ingredients and mix until just combined. Transfer half the dough to the pan and with your fingers press the dough firmly into the bottom.

7. Spread on half the marshmallow meringue, sprinkle with milk and semi-sweet chocolate chips. To the remaining dough, add cocoa powder and toss to mix. Layer the dough on top of the chocolate chips and pack it lightly into the pan.

8. Bake for 26-28 minutes. Remove and let cool completely before removing from the pan.

9. Transfer the remaining marshmallow meringue to a piping bag with a round tip. Once the cookie bar has cooled, pipe on the ghosts. Pipe a ball shape for the head and pull out for the body, tapering off the end as you gradually decrease pressure. Melt a few chocolate chips and using a toothpick, draw on the eyes.

10. With a blow torch, lightly toast the meringue for a smoky campfire taste.

Strawberry Rhubarb Pie Bars

Prep Time: 20 minutes
Bake Time: 30 to 35 minutes
Total Time: 50 to 55 minutes

Ingredients:

Filling
1 ¼ cup rhubarb, diced small
1 ¼ cup strawberries, diced small
1 Tbsp lemon juice
2 Tbsp brown sugar
2 tsp cornstarch
½ tsp cinnamon
Pinch of salt

Dough
12 Tbsp unsalted butter, softened
1/3 cup packed brown sugar
¼ cup white sugar
1 2/3 cup all-purpose flour
½ tsp salt
¼ cup chopped nuts (optional)

Directions:

1. Preheat the oven to 375°F. Line an 8×8-inch square pan with parchment paper and set aside.

2. In a mixing bowl, toss together the rhubarb, strawberries, lemon juice and 1 Tbsp of brown sugar. Set aside.

3. Using an electric mixer, cream together the dough’s first three ingredients: butter, brown sugar and white sugar until light and fluffy. Add the flour and salt. Mix on low speed until combined.

4. Place about 2/3 of the dough in the pan. Press the dough into the pan using your fingertips or the flat bottom of a measuring cup. Set aside.

5. Drain off most of the juice from the fruit mixture. Add in the other Tbsp of brown sugar, as well as the cornstarch, cinnamon and salt. Toss to combine. Pour the fruit mixture on top of the crust and spread evenly.

6. Mix the reserved dough with the nuts (if using) and sprinkle over the top of the fruit. Bake for 30 to 35 minutes or until slightly browned on top and the juices around the edges of pan bubble.

7. Cool the bars completely before slicing.

Ingredients:
Base:
3/4 cup graham cracker crumbs
1/2 cup shredded unsweetened coconut
1/2 cup walnuts, finely chopped
1/4 cup unsweetened cocoa powder
1/4 cup granulated sugar
6 Tbsp unsalted butter, melted
1 egg, lightly whisked
Pinch salt

Filling:
6 Tbsp unsalted butter, softened
2 Tbsp custard powder
1/2 tsp vanilla extract
1 1/2 to 2 cups confectioner’s sugar
2 to 4 Tbsp milk

Topping:
4 oz semi-sweet chocolate
1 Tbsp butter
1 Tbsp coconut oil
1/2 to 1 tsp  peppermint extract, or to taste
Crushed peppermint candies

Directions:
1. Pre-heat oven to 350°F. Line an 8-inch square baking pan with parchment paper and set aside.
2. In a mixing bowl, combine graham cracker crumbs, coconut, walnuts, cocoa, sugar and salt. Stir in melted butter and egg. Mix until evenly combined.
3. Dump the mixture into the prepared pan. Press/smooth into an even layer using an offset spatula or the back of a spoon.
4. Bake for 10 to 14 minutes, or until the top feels slightly firm. Allow to completely cool on a wire rack before adding the next layer.

Peppermint Nanaimo Bars

For the Filling:
1. Using an electric mixer, beat the butter until smooth. Gradually add in the remaining ingredients until incorporated. Turn the mixer up to medium and mix until smooth and creamy. Add a bit more milk and/or sugar as needed until the filling is a spreadable consistency.
2. Spread on top of cooled base with an offset spatula. Chill in refrigerator until slightly firm, about 20 minutes.

Peppermint Nanaimo Bars

For the Topping:
1. Once the custard base has chilled, place chocolate, butter and coconut oil in the top portion of a double-boil. Melt over simmering water and stir until smooth. Add peppermint extract to taste.
2. Spread melted chocolate over chilled custard layer. Sprinkle with crushed peppermint candies and refrigerate until chocolate sets.
3. Once set, run a thin knife around the edges of the pan and pull out the squares using the parchment paper. Slice into 12 even bars using a large, sharp knife. Enjoy!

Banana Split Cheesecake Bars

Ingredients:
Crust
1 (312 g) box (5 cups) vanilla wafer cookies
¼ cup granulated sugar
¼ teaspoon salt

2 ¼ cups heavy cream, divided
3 ozs (93 g) semi-sweet chocolate, chopped
3 (250g) packages cream cheese, room temperature
1 (96g) package of instant banana cream pudding
1 cup granulated sugar

Topping
1 (1 L) container frozen whipped topping, thawed
2 bananas, peeled and sliced
¾ cup maraschino cherries, drained
½ cup dry roasted peanuts
2 Tbsp rainbow sprinkles

Directions:
Crust
1. Preheat your oven to 350°F. Lightly spray a 13×9-inch pan with nonstick cooking spray and line with parchment paper.
2. In the work bowl of a food processor, pulse together cookies, sugar, and salt until small crumbs remain. Pour in melted butter and pulse until combined.
3. Press into bottom of prepared pan. Bake until lightly golden brown, about 10 minutes. Let cool completely.

Filling
1. Place chopped chocolate in a medium bowl. In a small saucepan, heat ½ cup heavy cream over a medium heat. Bring to a simmer. Pour over chocolate and let stand 2 minutes. Slowly stir together until combined. Let cool completely.

These Strawberry Shortbread Jammy Bars Are Almost Too Pretty to Eat

It’s not summer without a crumble bar filled with seasonal berries, and few are as decadent as these jammy shortbread treats. They are reminiscent of traditional thumbprint cookies, but offer the perfect amount of berryful jam in every bite.

Cornmeal gives the cookie base the crumbly texture we all love in shortbread, and the muscovado sugar adds a hint of caramel. A pinch of lavender sprinkled in the dough complements the bold strawberry sweetness.  With strawberry slices, garnishing every square, the streusel topping melts in your mouth. These are irresistible, especially with a cup of afternoon tea.

Ingredients:
1 3/4 cup all-purpose flour
1/4 cup fine cornmeal
2 Tbsp cornstarch
1/4 tsp fine sea salt
1/4 tsp culinary lavender, crushed
1 cup unsalted butter, room temperature
1/3 cup muscovado sugar or brown sugar
1/2 tsp pure vanilla extract
3/4 cup strawberry jam
4 medium fresh strawberries

Directions:
1. Place the oven rack in the centre of the oven. Preheat oven to 375ºF. Line an 8×8-inch pan with parchment paper, leaving a little overhang on the sides.
2. In a medium bowl, whisk together flour, cornmeal, cornstarch, salt and lavender until well combined.
3. In the bowl of a stand mixer fitted with the paddle attachment, or in a mixing bowl with a sturdy wooden spoon, cream together the butter and sugar until smooth. Beat in vanilla.
4. Carefully tip in the dry ingredients and mix on low until the dough is the consistency of damp sand. Scrape down the sides of the mixer and scrape off the paddle.
5. Reserve a heaping 1 cup of shortbread dough and add the rest into the prepared pan. Distribute the dough evenly around the pan and press into the bottom. Poke the crust a few times with a fork. Bake this bottom crust for 10 minutes, then remove from oven and cool slightly, about 5 minutes.

6. Spread the jam over the shortbread base. Crumble the remaining dough over the jam, and then thinly slice the fresh strawberries and arrange them on top.
7. Return the pan to the oven and bake for an additional 20 to 22 minutes, or until the top shortbread crumbles are lightly browned and the jam is bubbly.
8. Cool the shortbread bars for 10 minutes, then while still in the pan, slice into 16 bars. Cool completely, then slice again when cooled. Use the parchment paper to lift the bars out of the pan. Store the bars in an airtight container for up to three days. Serve warm or room temperature.
