11 Foods That Should Never Be Refrigerated

Call me weird, but I really hate putting away the groceries. There’s never any room in the fridge and I now know why. I’ve been putting foods I don’t need to refrigerate in my already-crowded fridge!

Have a look at the list below (I’m going home and taking out #3, #6, #7 and #9 immediately)!

honey-in-jar

1. Honey

No need to put honey in the fridge, it’ll just thicken and crystallize which is really annoying to scoop out but perfectly fine. Honey is all natural so it stays good almost indefinitely in the pantry. In fact, a 1000-year-old jar of honey will be as fresh as the day it was put into that jar.

2. Avocados

Avocados should not be refrigerated until they are ripe. Once ripe, you can put them in the fridge for a week. Best to keep avocados whole, not sliced, to avoid browning that occurs when the flesh is exposed to air. Also if you want them to ripen faster, put them on top of your fridge in a paper bag.

3. Hot sauce

I didn’t know this but you can keep it in the pantry for up to three years!

4. Coffee

The fridge (and the freezer) create condensation which affect the flavour of both ground coffee and coffee beans. It’ll also absorb odours in the fridge. My mom actually uses coffee grounds instead of baking soda for its odour-absorbing powers. Keep coffee in an airtight container in the pantry.

5. Onions

Avoid direct sunlight. Keep them in a cool, dry place but NOT next to your potatoes. When stored together, both deteriorate faster. Moisture in your fridge will turn onions soft and moldy–yuck.

6. Potatoes

Putting them in the fridge affects the flavour and texture (they become gritty) Store in the pantry in paper bags (plastic bags trap moisture and speed decay). Most varieties should last three weeks but not next to the onions (See #5).

7. Bread

Did you know refrigeration will dry your bread out quicker? It’ll also make it tough and less tasty. Unless it’s sliced bread you plan on using in the next few days, keep it in the freezer or the counter.

8. Tomatoes

Tomatoes lose all their flavour in the fridge because the cold stops the ripening process. It also messes with the texture and them mealy and mushy.

9. Melons

You really shouldn’t store any whole melon fruit in the fridge. Once it’s cut though, that’s another story. There’s research that shows refrigerating whole melons decreases the antioxidants – that’s the good stuff you want.

10. Garlic

Store them in a cool, dry and ventilated container to preserve their powerful flavour. Once the head has been broken open, use the cloves within 10 days.

11. Oils

Nut oils (like hazelnut oil or peanut oil) must be refrigerated, but for other types of oil keep them in the pantry. They become cloudy and harden when refrigerated. While this doesn’t do lasting damage, it’s a pain to wait for the oil to warm up before it flows properly again.

Hosting the Perfect Parisian Dinner with Laura Calder: Good Wine is Not Pretentious

Here’s part three in a series of charming short Paris videos from Laura Calder.

Laura and her friend Philip Haddad are throwing a dinner party in Paris for expat friends and we’re invited along for the ride.

Their first stop was the local market for inspiration, their second stop was for some incredible bread, third stop — wine and cheese, bien sûr!

I love how Laura just breaks stereotypes about wine, pretensions and dare I say it… the French. I also love the line about wine-loving company — that you need one bottle for two people but 20 bottles for 10! Ha… I’ll drink to that.

Hosting the Perfect Parisian Dinner with Laura Calder: Go the Distance

Here’s part two in a series of short Paris videos from Laura Calder.

Laura and her friend Philip Haddad are throwing a perfectly bohemian dinner for expat friends in Paris and we’re invited along to see how it’s done.

Their first stop was the local market for inspiration.  For their second stop, Philip who happens to be a bread aficionado, takes Laura waaaay across town for some incredible bread.  Low-carb be damned!

Hosting the Perfect Parisian Dinner with Laura Calder: Get Inspired

I just adore these short videos by Laura Calder from Paris. It’s the next best thing to being in “The City of Light” (“La Ville Lumière”).

This latest in a 7-part series is all about how to throw the perfect bohemian Parisian dinner.

Laura’s first stop is the local market, bien sûr, where she heads out with her friend Philip Haddad, Toronto dental surgeon and bread aficionado.

For me there are so many Parisian moments in this video — like when she says she’ll slip into something more “uncomfortable” (Parisians dress impeccably even to take out the trash) or the “revolutionary” concept of buying just one slice of pumpkin or one stalk of celery. LOVE.

Laura Calder’s Random Acts of Christmas: Giving and Giving (and giving!)

Here’s the latest video from Laura Calder.  The host of French Food at Home has been experimenting (and having tons of fun as you’ll see in the videos) with telling food stories where food isn’t directly mentioned.  The last one was about the humble chopstick, this one involves a tall, handsome stranger and perseverance.  It’s also hilarious.

Laura Calder’s Random Acts of Christmas: An Underground Movement

Laura Calder, the host of French Food at Home, has been busy shooting a series of videos just in time for the holidays. She told me she wanted to experiment with telling food stories where food isn’t directly mentioned.  Here’s the first in the series, centred on an every day kitchen utensil.

Can a simple, little chopstick really save a dreary day? Watch and find out.

8 More Places to Eat and Drink in Vancouver Right Now: Part Two

Here’s part deux of my curated list of places to eat and drink in Vancouver right now — just in time for all those holiday parties. If you missed part 1, you may want to read it first. I’ll wait.

vancouve_medina1. Café Medina @CafeMedina

Don’t take my word for it, the long lineups at Café Medina speak for themselves. You can’t go wrong with Chef Jonathan Chovancek’s rustic Mediterranean inspired dishes such as the Harissa Burger, and Fricassee Champignon (vegetarian and gluten-free). They’ve recently moved to a bigger, brighter space but the food is just as delicious. If you’re in the mood for something sweet, Café Medina is famous for their Belgian waffles with countless toppings such as this Bluberry, Sumac and Juniper Preserve, not to mention their lavender lattes. The only downside? The lineups!

** Just got word that this popular brunch spot is available evenings for private functions.

*** If you’re looking do something special this holiday season, how about a waffle brunch. You’ll want to read these tips for making perfect waffles from Chef Jonathan before you do.

vancouver_shri_gyoza

2 &3. Shirakawa @shirakawavan and Gyoza Bar + Ramen

These two spots, specializing in modern Japanese cuisine, are the latest additions to Vancouver’s Gastown. Shirakawa, popular chain of brasserie in Japan, has recently opened their first North American spot in Vancouver. They are the only place in town serving high- end kuroge wagyu beef from Japan. If that’s out of your price range, opt for wagyu beef sushi or the fried hamburger on grilled Japanese milk bread – very tasty.

Gyoza and Ramen are two of my favourite dishes so it’s not surprising that I loved this place. Dubbed as Vancouver’s first “Gyoza Bar,” the food is great, the ambiance is casual and convivial. In short: this is my kind of joint. Be sure to order one of their signatures dishes — teppan gyoza or kaisen tomato ramen – I tried both. Deelish!

vancouver_secret location
4. Secret Location @slocation

One part lifestyle boutique, one part restaurant, I can so imagine Lady Gaga eating and shopping at this concept boutique/eatery. Chef Jefferson Alvarez serves up an ambitious five -course discovery menu each night for those who want something extraordinary. Comfort food, this ain’t, but if it’s creativity, imagination and boldness you crave, this place is it.  There aren’t many places in Canada serving sturgeon marrow you know? (bottom pix)

vancouver_boulevard5. Boulevard Kitchen & Oyster Bar  @blvdyvr

This much anticipated new restaurant that recently opened in the iconic Sutton Place Hotel – lives up to the hype. It’s hard to miss with Executive Chef Alex Chen at the helm (previously of the legendary Polo Lounge at the Beverly Hills Hotel). Boulevard’s seafood-focused menu is grounded in classical technique but Chef Chen isn’t afraid to experiment. Start with an order of the crispy chicken will with fish sauce caramel, sambal chilli pickled vegetables, not to mention the obligatory seafood tower – amazing. You may be inspired to try these recipes at home: Boulevard’s Bouillabaisse and Citrus-Cured Hamachi with Hearts of Palm.

vancouver_forage
6. Forage @foragevancouver

You can’t get more local and sustainable than Forage. Chef Chris Whittaker serves up casual, comfortable and affordable dishes, celebrating all things BC. The menu is locally focused in both food and beverage. He makes a point of using cuts that’s often overlooked — like this recipe for Kasu Salmon Collars — sustainability at its most delicious.

vancouver_rawbar
7. Raw Bar at the Lobby Lounge

You can’t come to Vancouver and not have sushi and Raw Bar at the Lobby Lounge inside the Fairmont Pacific Rim Hotel is a superb choice. Canada’s first 100% Ocean Wise sushi restaurant, Sushi Chef Takayuki Omi’s passion for sushi and sustainability is inspiring. Chef Jonathan from Café Medina said it was his favourite place in the city for sushi. And I think it’s mine too. Not everyone wants to make sushi at home so we got this Manila Clam and Smoked Bacon Sakamushi recipe for you to try.

Kick back and enjoy a delicious cocktail all the while enjoying the live music played on the white Fazioli piano, the Ferrari in the world of pianos.

8. Bella Gelateria @bellagelateria

If you’re in the mood for after-dinner treat, walk over to Bella Gelateria (conveniently connected to the Fairmont Pacific Rim) for award-winning, handcrafted old world gelatos and sorbettos. In 2012, owner James Coleridge won both the public choice award and the judge’s award at the Firenze Gelato Festival with his Pecan and Canadian Maple Syrup.

7 Places to Eat and Drink in Vancouver Right Now: Part One

Vancouver is one good-looking city. You have the ocean to one side, mountains on the other and so much good eating and drinking in between. Blessed with milder weather, it can definitely embrace eating and growing local more than any other province in Canada. Here’s a curated list of places to eat and drink in Vancouver right now just in time for all those holiday parties – part 1. I had to break it up into two parts because the post was getting too long! vancouver_prestons_use 1. Prestons Restaurant at The Coast Coal Harbour Hotel

Start the day right with a delicious breakfast at Preston’s with their new regional executive chef Shelly Robinson (@Foodwork). She won Chopped and I can see why. The revamped brunch menu is out of this world! I loved the lil ‘wat’ smocked sockeye salmon, spinach puree, beet pearls on bannock or if you want something sweet, try the gluten-free quinoa waffle stack with avocado espuma (Spanish for foam) and fennel marmalade. Here’s the recipe for those wonderful waffles. vancouver_beaucoupbakery 2. Beaucoup Bakery @Beaucoupbakery

Here’s the perfect spot for a light breakfast, mid morning pick-me-up, or mid-afternoon pick-me-up, or any time pick-me-up. French trained pastry chef/owner extraordinaire Jackie Kai Ellis serves up fabulous French treats that’s good for any time of the day. Her specialty is croissants, try the vanilla-bean version if you can, but her delectable desserts are just as good. They are almost too pretty too eat – almost. Jackie contributes to our site, don’t you know. Be sure to check out her tips on throwing the perfect pastry tasting partyvancouver_edible 3. Edible Canada @ediblecanada

Located In Granville Island Market (another requisite stop for any food lover), Edible Canada is a culinary tourism company with retail store and bistro aimed at promoting local food and highlighting Canadian cuisine. Kick off your meal with the most delicious Maple Bacon Caesar and tuck into their menu of Canadian Comfort Classics. From Gulf Island Mussels Chowder, Wild Mushroom Omelette to Quebec Duck Poutine – you can’t miss at this popular spot. We have the recipes to that out-of-this-world Maple Bacon Caesar and Quebec Duck Poutine. You are welcome. Be sure to check out the retail store attached to the bistro. I picked up some award-winning artisanal chocolate from Beta 5 @beta5chocolates – To.Die.For.

4. Artisan SakeMaker @Artisansake

Stop by and try some Osake sake – Canada’s first locally produced fresh premium sake. Who knew?! vancouver_settlement 5. Belgard Kitchen @BelgardKitchen

Then it’s off to The Settlement Building for craft beer and wines on tap. Be sure to try some signature dishes at the Belgard Kitchen like that yam gnocchi with lamb sausage ragu. Lucky for us Chef Reuben Major has shared the recipe.

6. The Parker @parkeryvr

There are so many dinner options in Vancouver and there’s one to suit everyone’s palate. Head to The Parker, a sexy and sustainable restaurant, serving all vegetarian fare located on the edge of Vancouver’s Chinatown (this area is definitely starting to develop). Start your veggie meal off right with a Vancouver Cocktail and enjoy the intimate space (just 9 tables and an open kitchen that uses hot plates!). vancouver_hawksworth 7. Hawksworth Restaurant @HawksworthRest

You can’t go wrong with a meal at Hawksworth Restaurant – a definitive dining destination (how’s that for alliteration). I had seen the place during its construction phase and I was super excited to see and eat here. Chef David Hawksworth is one of the best chefs we have in Canada – in my humble opinion. He works magic with seafood and you can too with this dungeness crab pasta and chili recipe from Chef David himself. And he’s a do-gooder on top of it all. Read about the Hawksworth Young Chef Scholarship.

Effortless Holiday Entertaining Tips From Laura Calder

Want to know how to throw party platter together in 5 minutes? Watch this latest video from Laura Calder, host of French Food at Home.  She’s been shooting these short sweet videos from Paris and this one is so timely. I just love what she does with radishes. So simple yet so chic.

Mark McEwan Kicks Off Diabetes Month With a Special Recipe

Top Chef Canada judge Mark McEwan is the featured chef and cover boy(!) of the 2015 Healthy Living Calendar sponsored by Sun Life Financial.

The calendar, now in its third year, is put together by Toronto General & Western Hospital Foundation and is aimed at increasing diabetes awareness—a condition that effects more than nine million Canadians, with more than 20 people being newly diagnosed with this disease every hour, of every day.

SK14037SUN-MMC_MarkMcEwan_3047

If you or someone you know has been diagnosed with diabetes (my father was diagnosed with type 2 diabetes), don’t fret, we have some tips from Dr. Gary Lewis, endocrinologist, and a delicious diabetes-friendly recipe created by Chef Mark himself. Read on.

Here are four tips from Dr. Lewis for people with type 2 diabetes:

  1. Maintain a high level of physical activity. Apart from recreational physical activity this could include using stairs instead of escalators or elevators, parking further away from your destination rather than fighting for the closest parking spot, getting off public transportation one or two stops before your destination, walking during lunch hour, exercising on exercise equipment while watching TV.
  2. Eat healthy, wholesome foods that have not been processed by a factory. Whole foods contain fibre, high-water content and are less calorie-dense than processed foods and often contain lower levels of sugar, salt and fat. Limit the quantities of the food you consume, even healthy foods in large quantities will promote weight gain.
  3. All adults should have their fasting blood sugar checked a minimum of once every three years, even if they are healthy.
  4. Promote a healthy lifestyle for your children.

To kick off Diabetes awareness month, why not try this family-friendly Sun-Roasted Carrot & Chicken Salad tonight, courtesy of Mark McEwan.

Rachael Ray Weighs in on The Paltrow-Stewart Feud

By now you’ve probably heard about the smack down Martha Stewart gave Gwyneth Paltrow. Martha said the actor turned lifestyle expert (thanks to the popularity of her GOOP website) should just stick to acting and stop trying to be, well, Martha Stewart.

Gwyneth took the high road saying she was psyched by the comparison. But Martha wasn’t done; she posted an article taking a dig at Gwyneth’s “conscious uncoupling” to ex-husband Chris Martin, featuring foods that go well together, titled… yep, conscious coupling.

And now we have Rachael Ray weighing in. Rachael is Team Gwyneth all the way saying, “I love Gwyneth Paltrow! I think she’s an amazing cook.” Unlike certain lifestyle gurus, Rachael believes cooking isn’t all about achieving perfection. “I want people to see messes and successes here. I want them to see something that’s relatable and attainable.” Take that, Martha.

Priceless Reactions from Kids Dining on a 7-Course, $220 Meal

You don’t have to believe me, but I swear, I also had this idea. I, too, wanted to take 5 and 6-year olds to some fancy chi chi restaurant and photograph their reactions. (Okay, I confess, I got the idea from The Bold Italic blog).

Well the New York Times Magazine took the idea and cranked it up a huge notch. They invited six second graders from Brooklyn to a private table at Daniel (one of THE most acclaimed fine dining restaurants in the world) with superstar chef Daniel Boulud watching over the whole affair. They then asked Jeffrey Blitz, the director of the Oscar-nominated documentary Spellbound, to make a video of the experience.

The result is insightful, provocative and just freakin’ adorable.  Props to the kids for being such adventurous eaters (I thought for sure the Smoked Paprika Cured Hamachi would stump them). I especially love it when Chef Boulud gets some brutally honest feedback on his ravioli dish — priceless!
